    While I'm not crazy about Bourgeois Meat Market's andouille sausage, which I have found to be a bit…read moretough, I enjoy their regular smoked sausage, and I'm a huge fan of their Cajun Smoked Tasso. For the uninitiated: Tasso is fast-cured, seasoned, and smoked pork shoulder. It's used in stews and simmered foods, softening as it cooks, adding a delicious, unique flavor and bite that's typical of many Southern Louisiana (read: Cajun) dishes. Tasso's difficult to describe, but you'll know it when you taste it. I just received four 1-lb. packages of tasso, shipped from Bourgeois' smokehouse in Gray, LA via FedEx 2Day. The order arrived in good shape, and though the ice packs surrounding the meats had melted, the tasso was smoked (and so, fully-cooked) and it was vacuum-sealed. It went straight into my freezer, and it'll be fine. The cost to ship from Lafourche Parish to San Diego doubled the price of the product, from $7.24/lb to around $15, but I pay that much (or more) for quality steaks and seafood, here at home, and it was my choice to spend top-dollar for meat that I know, from experience, will make my gumbo, red beans, etc. taste better than I could otherwise make them. Kudos to the folks at Bourgeois Meat Market for offering a high-quality product, and for handling the purchase and shipping in a professional manner. I like visiting their shop when I'm in the area, but I LOVE that they don't make me get on a plane to eat what they're cookin'!

You find your own table inside or outside. Sides are separate order and price unless you order the special of the day amd it'll say what it comes with. 1st time ordered le pig. It was good, a little salty. But its not as tender as a beef burger. It was a nice change up. The pickles were good. We ordered some to go. ( take with you or they can ship to your house). The burger itself was filling to me. Rest of my party bbq pork and fish platter. Hush puppies were okay, they give so much. I could honestly do without it. Everyone was satisfied. 2nd visit ordered the porchetta . That was really good. Ordered a mac and cheese. It has breadcrumbs on top it comes in a small dish that i feel like is shareable. It wasn't bad actually ( ive had worse lol). One of the workers did really suggest it. I was willing to try it. It was edible, no cheese pull but also not just buttered noodles. Depending on my mood I might get it again. Porchetta and the leadership pig, I think the porchetta was better but both are great and filling.

And, the variety of hot sauces they make will blow you away! They do about 6 different sauces, only some of them are presented on a given day. On occasion, they are all available. There is some drawback here... Sometimes the wait is longer than desired. At times this is completely reasonable as the place gets packed like sardines. But... there is also a time, here and there, where the place is empty, and it takes 20 or soooo minutes to get your food. If you are worried about this, order 2 tacos de lengua with your meal, and they will come out before the rest of your food! Enjoy!
