Our Mardi Gras season here in Mobile has ended, and as we are well into Lent, I finally have time to compose a review of this unique and very good bakery. I wish that I could say that I was the one at our household who discovered Dropout Bakery, but I cannot. Instead it was my wife who, searching for someplace other than a supermarket to purchase a King Cake for our Mardi Gras celebration, found this fine bakery. Now, as I have never actually been to its location in downtown Mobile, it should be understood that this review is based solely on my experience with consuming their product. My wife learned that this bakery has an online ordering system, and that the product ordered through their website should be picked up the following morning. She further learned that, because of high demand, their in store product usually sales out within minutes of their opening each day. So as a first try she ordered a 6 inch King Cake, a small spinach quiche, and two petit-fours. The next morning she drove downtown and found, as she had learned it would be from online reviews, a long line to the bakery of customers waiting for the business to open. After going the long queue and finally upon reaching the interior, she found her online order waiting for her, separated from the other produce which was being quickly bought up by the customers in shop. This small business simply does not yet have the manpower or equipment to produce enough product to last beyond one day. Which is a good thing for customers who insist on same day freshness. The quiche and petit-fours did not survive long enough for me a get a photograph of each, but I did manage to get a photo of the King Cake, which I have included in this review. Finally, we found each item to be superbly delicious and very much worth the effort. We will be back again soon in order to sample more of their product, especially their larger King Cake when Mardi Gras season rolls around again next year. read more

Made a stop at Dropout Bakery while in Mobile this weekend, and it absolutely lived up to the hype. They're doing a Euro Summer theme right now, and the whole pastry case felt like a little vacation. Everything looked so good that narrowing it down was honestly the hardest part. I went with the Conecuh Pepper Honey pastry and the Coconut Mojito Cruffin, and both were absolutely delicious and so creative. We just discovered this cute bakery, a block from our place in downtown Mobile! Got a mini brown butter cream cheese king cake, banana bread with bisscotti frosting, conecuh and cheese croissant and a passionfruit coconut cruffin. So far we only ate the banana bread. As a family, we are all big fans of bakeries, so when we visited our son during Mardi Gras, he suggested Dropout Bakery. What an amazing place! They had a lot of unique items such as a blueberry eclairs, mango salted caramel tarts, and white chocolate croissants. They even had gluten-free items including a neopolitan cupcake. They also had savory items like a honey pepper conecuh croissant and a lemon pepper turkey croissant. I tried a banana pudding croissant and it was wonderful!!!!!! One note for next time, ask for a plate and lots of napkins because when I took a bite the banana pudding squirted all over my pants. Just FYI, there is inside and outside seating. read more

Everything they bake is a full grade above the status quo, a solid A+ in deliciousness every time. What really blows me away is that they come out with a new menu every single week. That's not just baking, that's creative research and development. You can literally taste the thought, effort, and technique that goes into every batch. It's like they've got a team of dessert scientists working overtime in there, fueled by butter and cane sugar I've been cutting out sugar lately, trying to make better choices. But Dropout Bakery is the one exception I happily make. Their treats are just too good to pass up, and you can really taste the care and quality in every bite. And let's be honest, creating a business is not easy. Starting something new and having it actually do well is a serious accomplishment. You can tell the owners put love, care, and a bit of magic into everything they do. Dropout Bakery is proof that when passion meets pastry, everybody wins. The ambience has its own style and uniqueness, it feels collegiate, creative, and laid-back all at once. It's the kind of place that makes you want to stay a bit longer, like a family bbq. I was excited to try this bakery since it's so highly recommended, and I was especially glad to find one open on Sunday in Mobile. Unfortunately, my experience didn't quite match the expectations. When I arrived, there were three staff members behind the counter, but I didn't feel very welcomed at first -- I had to initiate to be acknowledged. The selection was also limited, with only four items available, two of which were "buttery croissants." I decided to try two croissants and two cookies. The cookies were fine, but the croissants were disappointing. They tasted stale, and when I asked to have them heated, the inside stayed cold while the outside became tougher, almost as if they weren't fully baked. I really wanted to enjoy them, but they just didn't work out. I think with a warmer welcome and fresher pastries, this place could easily live up to the praise it gets. read more

The owner is the sweetest, most creative human! I ordered a cake for my best friend's baby shower and she knocked it out of the park. She suggested a dome cake to fit the whimsical, cottagecore vibes of the party. It was absolutely incredible. Everyone at the party loved it. Taste was amazing - almond cake with raspberry preserves. I was looking at some of baked goods on display in the store. The brown butter cinnamon roll caught my eye. I also saw another treat but I don't remember the name of it though. The woman behind the counter clearly explained to me what it was and named it. I looked at her and thought I was paying attention but can't for the life of me remember what it was. I have a picture of it. If you know the name of it please let me know so I can commit it to memory. Anyway, I bought 2 brown butter cinnamon rolls and 2 of the treats to be named later. I was not going to eat the baked goods by myself. I shared them with my family. I just know I wanted to try these particular items. I cut off a piece of both to try. I can't remember which one I tried first. I'll say the treat to be named later was so good. It was covered in chocolate and it exquisitely made. It looked like a work of art. My description of it is lacking because I have no words to describe it other than it exceeded my expectations. I believe it may have been a macaron type thing but I've never actually eaten a macaron. The brown butter cinnamon roll was delightful. It was sweet but the brown butter gave it a taste like no other cinnamon roll I have had. The croissants are to die for. It is like you are sitting in Europe. I loved the chicken salad as I could taste bits of onion. My friend had the honey dijon ham croissant and he stated it tasted good but felt it could use more dijon. The building is bright and clean with a courtyard that is well maintained and beautiful tables with umbrellas. The service is impeccable. No coffee. Limited drink selection, not even bottled water. I asked for a cup and she had me fill it myself in the employee hand sink. I ordered a turkey peppercorn croissant. It was small and @$7. But it would have been nice if she had warmed it before sticking it in a box and dumping it on the counter. I definitely felt like the young woman thought waiting on me was beneath her. Ah, well. She also thought I shouldn't bother her with questions, nor was she going to volunteer information. So...I probably won't frequent a bakery with no coffee and not many other drink choices. Their are several nice outdoor picnic tables, not handicapped accessible. There is extremely limited not handicapped accessible seating on the first level and a nice but completely inaccessible space upstairs with better seating. The bathroom was clean. I could tell you more about the pastries if the woman had been willing to communicate. I got an amazing and huge cookie for a friend, it was so large he shared it with his caretaker and they were both happy. It had sugared pecans in it. My other friend got a vanilla cupcake that was normal-small, and she raves about it. The pop tarts are homemade but taste amazingly like real pop tarts. I'm really disappointed. I bought a savory pastry and a sweet one. When I got home, I realized that the pastries that I was given weren't nearly the same as the ones displayed. The savory tart was supposed to have dill, feta, cream cheese, honey and tomatoes. My tart was missing the dill and the feta entirely. The pastry was far too thin. What I ended up with is a mouthful of bland cream cheese and cherry tomatoes. The gingerbread muffin was much smaller than the one on display and was not properly proofed. It was dense, tough and a bit rubbery. It needed more spice and flavor. I paid $18 for really poor quality bakes. If I had made these in my kitchen, I would be embarrassed to offer them to anyone for free, let alone sell them.
