This review has been long overdue. I have been following the career of Lars Williams when he was at Noma, the Nordic Food Lab and then Empirical Spirits. When I was last in town they were in a smaller space a few doors down. They moved into a gigantic warehouse and have really filled it out. They also have a formal tasting room and do tours now which is so different from the scrappy startup they were last I saw. The difference in how they do their spirits is they use koji fermentation of various grains and then do a minor distillation to achieve a lower AVB spirit. THings like ume plum .habanero pepper, elderflower, and birch are just some of the flavors they've infused in their distillates. They make for great cocktails and they've also started to create these "road sodas" which are canned low alcohol beverages to boot. If you go to places like Noma, TATA, Slurp Ramen or other connected restaurants/bars around Copenhagen, you'll more than likely see their product carried there. Looks like they are also expanding to the USA so I am looking forward to seeing what they make on this side of the world... read more
