Big Bro said the one thing he did not want to miss eating at Bacolod is cansi/kansi.
We already had inasal (another dish born in Bacolod) and kansi was next on the list.
And to be honest, I had no idea what a kansi is. Big Bro's easy explanation is "it's bulalo and sinigang put together."
Cuzzo (who lives in this city) recommended this place. Gotta follow the locals' suggestions, right?!
So, off the bat, I'll say this: this place is poppin'. From beginning to the end of our meal, they were not in need of customers. They really are popular!
Ordering the kansi was a no-brainer, but we decided to get a couple of other things to offset the taste: daing na bangus, tortang talong, and some pickled onions to cleanse the palate.
Is the kansi worth it: ABSOLUTELY.
The broth's flavor alone is so deep and hearty - it really is a combination of bulalo and sinigang, kinda hard to explain but trust me when I say it works! The meat was tender and easily fell off the bone. And how they serve it is clever, really: they fill up the bowl with as much meat as possible (with broth) and give individual sides of the soup. It was a hot and humid Bacolod day and none of us cared that we were eating a hot bowl of beef soup! I've never had anything like it, what an incredible culinary experience!
FOOD: 5.
SERVICE: 4. As busy as they were, we were tended to as needed.
VALUE: 4. Worth it!
PARKING: Street only. This is a challenge. Plan accordingly.
OVERALL: 4.25.
The daing bangus and tortang taking were nothing to call home about, but they're not what we came for. That kansi, though, is AM.A.ZING.
