5/5. Its pretty good, but depending on how you like your burgers, it can range from great to amazing. For reference, my burger eating experience includes In n out, Five Guys, Culvers, Shake Shack, and Habit burger. I've also tried various local places like Zuni's burger, the 2x "best burger in America" at Au Cheval (though I prefer small cheval better), various pub/bar burgers and Kuma's in Chicago. Yes I also have eaten at Jack in the box, steak n shake, "arby's", McD, Wendy's, Checkers, Epic burger, and Burger King.
As a red (white and blue) blooded American, I feel like I have substantial experience and knowledge of burgers and burger styles. Given the make-up of the Fergburger, I would consider it most akin to the steakhouse burger. So if you like steakhouse style burgers, then this burger is in my opinion top 5 burger I have ever had for that style. I would say top 8 burger overall.
What it is:
A steakhouse burger. The beef patties are each a little of a centimeter thick and cooked to medium-rare with ~50% browning of the outside. The patties are probably most similar to the Five guy beef patties. It's similar thickness to Five guys burger but much wider. Since it's cooked to mid-rare, its more moist and not as dried out as Five Guys. It's also not overly seasoned and ultimately comes off as very beefy.
What makes Fergburger better than most burgers is the bun. Fergburger buns are soft but dense enough to withstand the moisture of the beef juice and the aioli sauce. In my opinion, this is one of the reasons why the Au Cheval burger has so many accolades. They have a good dense bun that doesn't disintegrate once it encounters moisture like white wonder bread does. Fergburger bun isn't just a physical interface between your hands and the beef like whatever buns burger king uses. Fergburger's bun actually contributes enough of a "doughy bite" to the burger for a positive experience. Respect.
Like a steakhouse burger, It comes with sufficient aioli sauce and onions. It also comes with a leaf of lettuce and slices of tomato. It doesn't taste too greasy either even with the bacon.
What it is not:
If you prefer the "diner style" burger, which has thin patties with lots of browning (Maillard's) and almost crispy beef, then Fergburger isn't really for you. You'll see/taste that it's a great burger, but you'll still favor with your Culver's or Shack Shake.
Fergburger isn't the balanced California-style burger like In n out burger is where each ingredient contributes to the burger equally. At Fergburger, the meat is definitely the star, but not the entire cast.
Fergburger isn't the minimalistic style burger where the burger is only meat, cheese, and (just ok) bread.
Other notes:
1) "American Streaky Bacon" is just regular bacon strips. It has a nice ham-y flavor. It does not overpower the flavor of the beef too which is nice. The bacon balances very well with the beef which isn't always easy to do. However, It is not crispy though at all, so keep that in mind. Sometimes, I just love how crispy the bacon is at Shake Shack or Five guys and how the crunchy bacon texture contrasts the soft beef and gooey cheese.
2) They have Cheddar cheese on the menu, but as an American, nothing epitomizes a cheeseburger more than a burger that has processed American cheese. Its less salty-tasting and "funky", but is more quintessentially "cheesburgery" (for lack of better words) compared to Cheddar cheese.
3) Thank you Fergburger for not mimicking those high-end restaurants that stack all their ingredients vertically and make the burger eating experience incredibly difficult and messy. With burgers that are too tall, each bite is not uniform which sucks. As a rule of thumb for burgers and sandwiches, you want something that is roughly the height of 2-3 fingers. Also, thank you for not making us shell out a lot of $$ for a small, unfilling burger (I'm looking at you Shack Shake! At least with In n out, the burgers are cheap enough that you can afford 2 of them)
Final words:
I don't know if I said every little detail I wanted to say but honestly, if you are in the area, try it. Its pretty good! Depending on how you like your burgers, it may be great or it may be the best you've ever had. I think its pretty damn good and worthy of the hype. But hand over heart, I still prefer In n out. read more
