We stopped by Fidels after a long day. We did make a reservation for 7:15, which I recommend, because they were decently busy on a Saturday night. They do have outdoor seating as well as indoor seating. Vibe is that of a typical, nicely and modernly decorated Mexican restaurant. Interestingly, they do serve shots on a wood platter (similar to that of a cortado with sparkling water palette cleanser), and half shots as well that seemed popular to the locals. The man that told us to visit here actually told of us this, and we saw it in action. We had to tap out after a day of wine tasting. Our party of 4 ordered the Oaxacan, Carne Asada, Bomb Ass Fish Taco, and Pork Carnitas. I would rank them in that order too from best to least best (none were bad, but the pork carnita felt a little dry as the overall consensus of the table). The Poblano fries were amazing. They tasted truly fresh and right off the fryer. It comes with 5. Loved the aioli and salsa too. Lastly, they had a house made pineapple habanero hot sauce that was AMAZING! If you're over in the Palisade area, this is definitely worth a stop I've made the drive to Palisade for Fidel's Cocina & Bar a couple times now, and honestly... it has not disappointed The chips & guac are some of the best around, and the DIP TRIO is a great starter -- black bean hummus, toasted pepita dip, guacamole, and house tortilla chips. Of course I had to add salsa, because... obviously Patti went with the Huevos Rancheros and really liked it Tyler tried the Chile Relleno and said it was the best one he's had in forever -- bold statement, but he's sticking to it. I've had the Chile Relleno too, and I get it. Fresh poblano, Oaxacan cheese, refried black beans, sour cream, pickled onion, cilantro, cotija... just yummy. I also tried the Oaxacan taco and carne asada taco, and both were absolutely on point -- juicy, flavor-packed, and straight-up And yes, Dad's jalapeño sauces are a must. The green and red both add that perfect little kick And a big win--they've got a great selection of gluten-free options (clearly marked), so it's easy to navigate if that matters to you And since it's a Mexican restaurant, I had to partake in a margarita I went with the Pinky -- Dulce Vida Grapefruit Tequila, Naranja, fresh lime juice, and fresh grapefruit juice. I was in Palisade last week, but they were closed for an employee party. The menu is mostly the same from May 2025 with a few price increases. My server was Catherine K. Very bubbly and knew the menu for both food and drinks. I got a new cocktail, Carrot Mezcal Margarita for $14. It is made with Naranja Mezcal, carrot juice, carrot simple syrup, and fresh lime juice. A stiff vegan cocktail. I got their Rainbow salad. Very colorful and large. A beautiful mix of spring mix with arugula, black beans, corn, red pepper, watermelon relish, carrots and plantain chips. One tub of creamy cilantro dressing was not enough. The 2nd tub was free. Next I ordered the Chile Relleno. Another large serving of Poblano pepper filled with oaxacan cheese and deep fried in a tempura batter served on a bed of pureed black beans. Very yummy and a bit spicy. I added a 2nd cocktail, the Alpenglow. This special drink is not on the regular menu yet. It had Aperol, tequila, lime juice and cream of coconut. A sweet sippable beverage. Enjoyed our taco adventure here very much. It's a cozy spot but they can accommodate groups well, dinner reservations are recommended especially during summer tourist season. We were a party of four walk-in on a Wednesday. Luckily we got the last walk-in spot. The group decided to start out with the chips and guacamole and, at our server's recommendation, we added the salsa duo. All three were delicious. The guac was especially tasty. My husband and sis-in-law ordered the peach margarita. When in Palisade at peach time, it is a must try. They both were happy with their selections. My brother-in-law and I opted for water. As for mains, my husband and brother-in-law both enjoyed tacos. My sis-in-law ordered the chicken enchiladas and I chose the chile relleno. The boys cleared their plates of the tacos in no time. Not a crumb left. My sis-in-law was disappointed in her meal. The menu had said "house made dried chile enchilada sauce," but what was on the enchiladas was mole. She is decidedly not a mole fan. She mentioned it to the server who responded that yes, it was mole and he was sorry she didn't like it. I think the wording in the menu should reflect the sauce accurately. I had the chile relleno and thoroughly enjoyed it. Chile relleno is one of my favorite dishes. The Oaxacan cheese filling was melty and delicious. The refried black beans were tasty. I thought the garnish of pickled onion was a nice touch as an added flavor. I would recommend making reservations, no matter the day of week. This place is popular and fills fast. If you have any food allergies, they do ask at the beginning, so I would recommend voicing any in case there are items not listed in the menu. read more

We tried several of their tacos and decided that the Quesabirria and the fish tacos were our faves, although they were all tasty. The salsa that came with our chip order came in both red and green. It was creamy, unlike other salsas we've had with chips. We prefer a more traditional salsa, but it's good to try different things. The top shelf margaritas were refreshing on a hot day. This place came recommended by friends in Grand Junction, so we dropped in for a quick bite while at the Palisade Farmers Market. Deconstructed Elote - excellent DON'T MISS Roasted Cauliflower Taco - neither of us thought it was very good until we added Chimichurri salsa that another person wasn't using. Then it was better. Wouldn't order again. Bomb Ass Fish Taco - very good Carne Asada Taco - very good Palisade Plunge Burrito - the person who ordered it didn't like it. Chile Relleno - very good but kind of bland. I'm from San Antonio, Texas. If you want to talk about tacos, it's hard to beat that. San Antonio is literally the Mecca of tacos in the world. The staff here were friendly and professional, and the concept isn't bad, but the tacos missed the mark. The Breakfast Taco and Carne Asada Taco were both lacking enough of the main ingredient. If you serve an egg taco, the taco has to have at least 50% egg. Not 20%. Same with the carne asada: it has to have enough meat so you can enjoy it. In this case, there was more cold slaw than meat, which is a bad ratio. Tacos become weak when they have little of what they are named for. Trust me, people would buy more if you loaded them up. I can go to Texas right now, get twice the amount of the ingredients, and it will be made to order--for half the price. read more

We struggle to have nice things in the western slope and this establishment is better than the majority, just a bit spendy. I went to Fidel's today with my parents. It had a hip and friendly atmosphere. We got the option of a hightop or regular table. We took the regular table. Our server was very friendly and took care of our every need. He provided recommendations. The chips and guacamole were exceptional. We loved the seasoning and how hot the chips were. The breakfast burrito was really good and savory. I loved the sauces they brought to the table. My mom really loved the wahoo taco. My only complaint is the wait was very long for the entrees. I had heard a lot of great things about Fidel's so was excited to visit with my friend and family. We made a reservation 1 week in advance for Saturday at 1:15 PM. We arrived on time, the nice hostess greeted us and sat us immediately. The restaurant is small and extremely loud. Modern decor, uncomfortable stools to sit on. We waited a while for our server to arrive to the table. I ordered cocktails, appetizers, and entrees. Our main course arrived first at 2:15 PM, after waiting for an entire hour. I was confused and asked the server if he still had our appetizers coming. He didn't put the order in ‍. We had the Bomb Ass Fish Tacos. I thought they were good, but small for $8 a taco. A tasty taco but far from the best taco you've ever had. Oaxacan Tacos next were good as well. Flavorful, tender flank steak, but again small for $7 a taco. The elk chorizo tacos were underwhelming. Just cheese and a bit of elk. $6 per taco. My friend had the chili rellano, which he described as better than basic but far from gourmet and delightfully crispy. When we finally got our appetizers (which were packed to-go even though I said we'd eat here) I was a little disappointed by the elote, but pleasantly surprised by the fried poblano. Our total was ~$160. I'm glad I got to experience this place, but probably wouldn't return. read more

We were fortunate enough to attend a medical and tequila pairing dinner in November. Everything about it was perfect. The service, the presentation and especially the flavors. The servers were friendly and seemed to really enjoy themselves while interacting with the guests. The place sits right in the middle of Palisade so it's easy to find and has a good vibe. I believe that Fidel's is named after their dog as there is a great picture of a good looking dog hanging in the hallway. Definitely want to return soon. Loved it! read more
