Honestly, for our family, we have to use this cut for mille-feuille nabe--anything else for shabu-shabu feels too tough, no matter how soft it looks. They also had some extras that saved us a grocery run like rice paper, radish wrap, brisket sauce, garlic/jalapeños with ssamjang, and green onion salad.
