Nick spent so much time brainstorming menu options with me on the phone to make sure every detail would be exactly what I was envisioning - all of my husband's favorite foods. He followed up with me throughout the week and on the night of our dinner, he DELIVERED big time! The whole dining experience was so far and above every expectation I had. My husband said it was the best meal and dining experience of his entire life, and we've eaten at some of the world's top-rated restaurants. We started with custom cocktails that were sooo delicious and balanced. Then for apps we had prosicutto-wrapped mozzerella, baked to crispy perfection with chili oil, roasted red peppers and basil + the best caesar salad I've ever had topped with applewood bacon. This is my 4th time using Chef Nick/Florida Fresh for a private dinner. As always the food and drinks were amazing! Nick is so talented and always creates the most delicious, fresh and creative menu. I wanted to do a very fresh fish/seafood centric meal for my guests and Nick came up with an outstanding 4 course menu for us starting with fresh fish dip and ceviche along with a lobster bisque (caught fresh that day), a Spanish onion crusted mahi and then a coco molten cake with vanilla bourbon sauce. Along with the food Nick also made us delicious tequila and mezcal cocktails with charred lime that were to die for! Nick is always on time, friendly, professional and kind. We had Chef Nick over last night for an engagement party and it really was next level! He crafted an amazing experience with superb attention to detail. The menu planning was clever to ensure our fussy fam were all happy. He went into detail re the back story behind the super fresh ingredients and how they were sustainably sourced which was appreciated. We had chef Nick come cook for us for my hubby's 50th birthday. He asked if he could bring his photographer friend and we are so glad he did because he got great pictures which he emailed to us. Chef again cooked us a fabulous meal several courses and 5 hours long. He started with scallops which were amazing-the sauce was so yummy! He also made a tomato mozzarella basil dish with a real nice sauce and lobster fra Diablo with homemade pasta and an awesome dessert with ice cream since hubby loves ice cream! Florida Fresh? More like Florida fraud... a home cook parading as a chef. He also overcooked the octopus because he smoked a joint on the patio instead of doing his job. He overstayed his welcome and was way too comfortable with the guests. He was also underprepared for the task at hand. The courses were not timed properly, and getting a drink was a hassle. He text us the evening before asking where us girls were going out. Odd but let it go. He was suppose to arrive at 6:30 to prep. Text messages of various excuses came through for an hour. Traffic, got in a fight with someone at a fast station, driving from Miami? Over an hour late and was frantic. Clearly not okay, bopping around. Wasn't getting started with anything just moving from place to place. Finally he said I'm missing an important bag. I said okay, what's in the bag? "Important stuff" I asked what is important stuff? He gave the same answer. He kept looking in our fridge for I'm not sure what. We spent money buying things for him to make us drinks and we e planned our whole evening around this.
