    Hard to know where to start. We wanted to do a Michelin experience while in Copenhagen and chose formal B as our star experience. We had also chosen a Michelin bib gourmand which we ate at the night before. One thing that stands out with formal B is the ability to choose your courses unlike most Stars that have set courses. This allows a more personal experience. And isn't the experience almost as or as important as the food when you are evaluating a Michelin? When we arrived we were immediately welcomed and made to feel that being there was special and you belonged. Like you were coming to a close friends for dinner. Our table was in the corner by a window with a slight view of the kitchen. The decor, the colors all perfect. We had decided not to do the wine pairing in advance as we didn't want that much wine so chose to share a bottle between 3 of us. We asked our waiter for recommendations and he was very informative and chose perfectly. He even chose below the price range we gave him. Our party of 3 ordered the following: Gold Selection caviar, Mackerel, Grilled Danish langoustine, Tatar of Danish beef, Roasted turbot, Back of Iberico pork, Danish raspberry with dulse ice cream, and Sea buckthorn en surprise. They start you out with 2 snacks. One a fermented strawberry crust over langoustine with chili. Amazing! And an oyster in a rhubarb vinegar equally delicious! The first bite let you know that what you were about to experience was going to be magical. There's also bread with the best butter! We loved the caviar with the olive oil sorbet! Again, taking our time to enjoy the flavor and texture combination. The mackerel was also very good with the pickled rose hips and gooseberries. The langoustine presentation was beautiful! Taking care to drag each bite through the bier blanc is key. The tartare hidden and nestled in the courgette flower was stunning and equally as delicious! We had tartare the night before also which we enjoyed quite a bit but this was another level. The turbot was so wonderful and again, beautifully presented. Our one not so good, was the Iberico pork. The peas and mint were so delicious, but the undercooked pork was hard to cut into with a sharp knife and chewy. So not like absolutely everything else. I would not recommend ordering it. Disappointing. The desserts were wonderful! The sea buckthorn en surprise is a lesson in layering. The flavors, the textures the temperatures! No words to describe how memorable this was! We left being so grateful to be able to have experienced this beautiful restaurant. Highly highly recommend. Can't wait to go back!

    I was again lucky to stop in for a "no reservations," dinner. The service here is a cross between à la carte and prixe-fixe. There are 12 plates available, and each guest is expected to choose at least five.  One major difference from most other prixe-fixe menus is that there appears to be no rule restricting the entire table to the same choices. The table of five next to me had, for one course, five different selections. For my selections, I enjoyed the brown crab, in pastry, coated with chili paste; and the roasted turbot.  Two servers tell me that the turbot is the restaurant's signature dish since 2006, but the menu unfortunately does not highlight this fact. I was happy to observe something I rarely see - involving a small table behind me.  The sommelier repeatedly tasted, conferred with a colleague, then rejected the bottle of wine the table ordered. He hurried to cellar but found no replacement, and was forced to apologize to the guests. If the sommelier cannot reject a bottle, why would a restaurant have one on staff? The other servers were equally proficient, and personable. I'll have to return, to sample the remaining plates. 2024 01 16. M1.

    This was incredible restaurant with a 5 course menu that should be considered one best restaurants in the world. Considering it a Michelin star I can't be too off! Each dish was brilliantly designed and explained by a team of people equally brilliant and welcoming.

    Copenhagen is at the center stage of shining Nordic cuisine. Noma helped redefine the cuisine but there are lot of really great restaurants in the city, which are continuing the journey of leaving an impressive footprint of the Nordic cuisine on the worldmap! Formel B is on this journey for over 20 years now!! The restaurant started in the level which is now the basement, and expanded to include the cozier and elegant dining room upstairs! I started with their cod ceviche which was interesting, and on the sweeter side. The only hint of spiciness was coming from mustard seeds. And for sure the imperial pigeon was great! For the dessert, I got their popular sea buckthorn en surprise! The cream shell was not too sweet and the sea buckthron icecream inside was, although on the more citrusy side, was pretty good!

    One of the best dining experiences of our trip. Food was well prepared and service was good. The menu we had included the following: Ceviche Caviar with peas Lobster gazpacho Beef tartar Potato compote Rack of beef Sea buckthorn dessert The Sea Buckthorn was the best. A little sour but not too much. Apparently it's poisonous if not cooked properly. Beef was really tender. We were originally seated by the bathroom but asked to move by the window. They were very accommodating. Overall, an excellent and also affordable meal.

    Ranked as one of the top restaurants in Denmark this is a place that deserves its ranking. A one Michelin star restaurant that serves modern Scandinavian food fused with continental European flavours. Designed in classic Danish style with sleek furniture, soft lighting, minimalistic and clean surfaces it's a casual restaurant with good service. The menu is a la carte or you can choose a fixed menu of five courses. They recommend that you choose five to six courses from the menu including dessert. There is an emphasis on seafood here and the use of local ingredients. It's about clean and delicate flavours with excellent presentation. I loved the mackerel, langoustine and lemon sole. It was seafood cooked to perfection and presented beautifully with amazing flavours. I did not like my Pork belly which was not cooked to perfection and, the flavours just did not go together. The dessert was simply amazing. The wine list is fairly extensive and prices are high, nothing unusual for Denmark. They were good with making recommendations and my choice of one or two of the dishes was based on the waiters favorites and so on. Wonderful experience and would come back here again.     This was amazing! This is officially my favourite restaurant in Copenhagen so far! We came at the end of November as a birthday treat with my two friends and we went for the Formel B Menu for 850 DKK. We didn't go for the wine pairing but opted for a glass of sparkling to start, a glass of Riesling with the fish course and a glass of Frappato for the venison. To start we were presented with the amuse bouche already blew us away because they were really good! I won't go into details about the courses as there are quite a few reviews on here describing the same things. Our menu had the salmon, lobster, signature dish of turbot and veal tails, venison and finished off with the plums with chocolate. It's very difficult to say which dish was my highlight as all the dishes were perfectly presented and starred real punchy fish and/or meat that were complemented delicately. The service was also brilliant. It was smooth and not overbearing. I will most definitely be coming back here again!

    As I think of Christmas in its classic opulence and sumptuous celebrations, I think of the meals I've had at formel B. From the utter simple beauty of the deliciously charred bread and branded butter, to the tableware, to the plates, I've learned to admire formel B and love it as one of my favorite restaurants. Even the bread and butter as it arrives table side are works of art-- the charred edges of the bread reminiscent of a Tarkovsky landscape, the butter lush in its purity. The progression of plate after genius plate to dessert to the ending coffee service and after dinner drinks, you feel you've come to formel B to celebrate and enjoy the newness of food creations here, yet you are convinced that these dishes evolved from classic preparations. With coffee service, you also get a sweets gift from the pastry chef, so if you're full, dessert is not necessary. Desserts however are unique here so you may wanna tempt yourself a togo option. The ambience at formel B is homey contemporary Danish, candles by windows and tables (candles are hygge in Danmark). I loved the layout of the restaurant. Service is super attentive, eyes-behind-the-head attentive. A meal here spans 2-3 hours of pure enjoyment, the staff gracious if you indulge them in conversation; otherwise their goal is to serve you dishes at an orchestrated moment--you feel it, it's subtle yet determined. Silently impressed. I've been here just twice now and am looking forward to my 3rd and many visits after. I've taken photos of the plates I liked and enjoyed from my last meal here in July and March so there are 2 meals in these photos not one, LOL. I'm sure there are other restaurants that are better but for this year, formel B rocks my culinary soul. For the inventiveness and beauty of its dishes to the almost nervy taste combinations that throw me to the clouds, I feel festive and feel the abundance of life's ingredients architected judiciously and artfully here.     Having been the victim of Copenhagen's awful bus system (clean but not on time or completely absent) we walked down Vesterbrogade from CIty Hall. Our Captain from AOC a few nights prior Sheila, was moving here and her boyfriend is actually the chef of Restaurant Sletten in Humlebæk. That small world association would continue here as our server Patrick worked at Søllerød Kro for Jan Restorff and was the housemate of Henrik our Captain/Sommelier there for lunch the next day. Crazy right? The walk down Vesterbrogade was about 30 min and we were decently hungry when we got there. We were seated in the main lower section to the left of the entry way. It seems there's an upstairs by the doorway, a slight downstairs and then another upstairs as you keep walking through the main room. The bi level layout is interesting in a roller coaster-ish fashion. The room is sleek, modern and dimly lit. We were along the wall where there was a hige display of wine and high end spirits nearby. There is a large electronic metal door which is actually the entrance to the restrooms and it was a source of confusion for many throughout the night. You push a button and this sleek metal door slides sideways. It did honestly look like the entrance to a spaceship and many people stood staring at it not sure how to get in until noticing the elevator style button. Patrick explained the menu and concept to us which changed recently from a set menu to a build your own tasting menu from a number of courses. Looking to maximize variety we each got a number of different things and swapped half way through each course having: -Baerii Caviar with Spring Peas, Pea Ice Cream -Salted Scallops with Beetroots, Malt, Yogurt, Cherry Boullion -Slightly Smoked Salmon with White Danish Asparagus, Mayonnaise -Mackerel Escabache with Tomato Consomme, Charred Cucumber, Mint -Tartare with Grilled Danish Salad, Pickled Onions -Lobster Bisque with Pasta Puntalette, Mushrooms, Pickled Green Tomatoes -Langoustine a la Nage with Carrot, Puree, Local Danish Vegetables -West Coast Turbot with Parsley/Garlic Sauce, Braised Veal Tails -Sea Buckthorn En SUrprise -Rye Bread Porridge Ice Cream with Vanilla and Rhubard As with just about every other meal we had in Copenhagen, this was stellar. formel B does a mash of both Danish techniques and ingredients with many other styles of cuisine. It was a good change up from some of the other New Nordic focused restaurants. Patrick our Captain grew up in Denmark but his father actually lives in Utah and he makes it to the US every year. He regaled us with stories of the great Jan Restorff and how we were going to have a great time at his former employers restaurant. He even wrote to them ahead of time to let them know we were coming. He had also already me Sheila from AOC so it felt like we were already in a circle of friends. Our other server Camilla was also super charming, super cute and very fun to talk to. She gave us a brief tour of the restaurant, the wine cellar and gave us insights on the Danish food world, economy and everything we wanted to know. So well taken care of like friends. Another amazing meal and another amazing time. If you're on a Michelin tour of Copenhagen, definitely add formel B to the list.

    Had an absolutely fantastic meal at Formel B. Presentation, flavor, creativity, and reasonable pricing were all present and accounted for at my meal, and the experience is surely worthy of a Michelin star. Not worth 5 yelp stars though, unfortunately. Despite the fantastic meal, I was not super impressed by the service. Particularly the part where it took us 45 minutes (not exaggerating) to get our waiters attention so we could get the bill. It was late in the evening (about 11pm) and we got the impression that we had been totally forgotten about as the staff went about their closing duties. I like to give the benefit of the doubt that this is not a common occurrence, but it definitely wasn't the ending to such a great meal I had hoped for.

    Highly recommended and a must go if you are in town. 130DKK for each of the small dishes on the menu. We tried almost every one between the five of us. From presentation to taste, each is equally creative, delicious and just the right portion. 3 or 4 selection will be a fair amount of food for most. Don't forget to leave room for the desserts. If you are not sitting next to the glass wall of the kitchen, do stop by and take a look as your food is plated. Most interesting. Staff is friendly and attentive. A memorable experience.

    Well worth the value and price for a meal. Another top notch restaurant that is worth a visit with around 20 dishes to choose from but of course you want it all. I had about four plus dessert and I was stuffed. Service was friendly, but on one occasion gave me "they are all good, depends what you like..." answers when I asked for recommendations. Although they weren't rude, it might just be my personal preference for a waiter to just take charge in a situation like this and act as a guide. Overall can't really go wrong with the choices here, again some were a lot better than other dishes, but I was highly satisfied with all my choices including the dessert.

Perhaps the locals are more used to the summer heat with no AC than we were. We had the 3-course prefixe meal with my my wife and daughter on the standard menu while I was on the vegetarian track. The website says that Host is the Danish word for harvest, and that their focus is "on the Scandinavian kitchen with lots of surprises." The staff used the word "surprises" explicitly, using it to describe the amuse-bouches and palette-cleansing bites served between the advertised courses. We started with a flight of croquettes with cheese and I think my wife and daughter had something like a smoked fish hash of some sort while by I had a delightful bite of salad on a molded sweet cookie tart shell. The baby bread loaves with a special butter were lovely - how do you innovate butter? Great job. My first veggie entree was fried carrots with horseradish, which was grand. Next I had a barley risotto with amazing brown beech mushrooms on top. Awesome. There was a spot of potato soup in there somewhere and the best bite of the meal was another of the surprises - a pre-dessert mochi-like shell with strawberry powder on the outside and hazelnut ice cream (I think???) on the inside. I don't blame the staff, they were definitely working across a lot, but after visiting two of this restaurant group's establishment, I could tell the owners of this restaurant systemically overwork their staff. I'd suggest if you are a true gastronomie fan, try to find a restaurant outside of this group! Not a bad restaurant, just feels a little fake if ya know what I mean.

We also got a window seat which had a beautiful view of the square below and some stunning architecture. We sat there for awhile just enjoying the view. When we were flying out of the Copenhagen airport we noticed this same restaurant inside one of the terminals. It's awesome to see such high quality food be offered in such casual but busy spaces. We'll definitely be back!

Butter deliciously salty. If they served this with ice cream or something sweet for dessert it would be the perfect sweet/ salty combo - Hiramasa dish: light, refreshing dish. The cheese foam bottom is reminiscent of a whipped, light sour cream and adds depth to the light fish. The shaved asparagus and fingerlimes add the perfect touch of crunch and acidity - Witch flounder, so delicate and mild in flavor, the purée adds depth to this dish while the bread topped outside creates structure.I've never had such a light piece of bread topping Love the garlic dollop and radicchio topping. Every part of this dish feels intentional - Sweetbreads: perfect cook on the meat, I love the light sherry paring with this since the main part of the dish is fried. I loved the combo of pickles and caramelized onion but I'm an onion lover. (Call me shriek) Definitely a nice contrast in texture and more of a main dish than the other 2 - Lamb: the only dish that didn't nail it for me. Cooked well but Felt under seasoned and I didn't have a distinct flavor profile or direction. A bit plain and forgettable - Dessert: tangy, creamy, a great cozy way to wrap up the meal.     While in Copenhagen last month we went to this Michelin restaurant, sister of a Michelin-starred…read morerestaurant in the same restaurant family. They were completely booked, but they accommodated us and we ate in the bar at the window countertop table and were not disappointed. The food was so beautiful and perfectly prepared. We had the "bigger Uformel experience" of seven courses with wine pairing. It was an incredible dinner and an amazing experience. Can't recommend this place enough. Make reservations well in advance!
