This business is definitely both. They have a plethora of Texas cuts of meat sourced from Texas ranches, They have both pre-packaged and counter-fresh. On the flip side, they also have an abundance of fajitas, chorizo, al pastor, and other Mexican meats, typically found at traditional taquerias. We bought their in-house recipe chorizo and a bacon-wrapped chicken breast stuffed with jalapeños and pepper Jack cheese. We haven't cooked the chicken yet but I hope it's as spicy as it sounds. The butcher is in Monday - Friday but they're open 7 days a week. If you don't live in town but want to call ahead, they'll have you're order ready when you arrive. This is perfect for all the hunters that visit San Saba from October - January. They also have a small selection of Mexican brand groceries that are not available at the local grocery store. This is a great business addition for San Saba. They are conveniently located about 1 mile west of downtown on Hwy 190. Bottom line - A great combination of an American and Mexican Butcher shop. The location is non-descriptive, right next to a gas station in a small store front. Don't let it fool you. Mike, the meat man, was very friendly, the customer service is friendly and down home. I dropped off a neatly quartered deer a few years ago and gave them a cut sheet, nearly a straight cut and super simple. None of the silver skin was trimmed, they completely did their own thing against my cut sheet, and I didn't receive hardly anything I actually asked for besides the ground burger. At that, the burger was full of silver skin and wouldn't pack. I was also charged $2.50/lb which is about 100% more than any local processor... total cost was $280... pretty expensive dog food. I was expecting top line cuts which I was excited about. Extreme let down. Do not make the same mistake I did! Take your deer to a local processor or do it yourself if you can. Not a knock against their normal product, just a warning if you ever considered dropping your deer off for "premium" processing.

Also, there is a wall of quite the selection of local honey, jams, etc. BUT the real gem, the raw meat counter was chock-full of incredible cuts and varieties of meats! We decided to try to the cordon bleu chicken and brisket poppers this trip, as well as an 18 pound brisket, YUM! The employees were ready to help with any questions and even handed us a basket when our hands started to get too full. So grateful! I will note for future review readers, there is about a 4% card charge. Apparently there are signs that I missed while I was busy bouncing my eyes from product to product, so I ended up having to call once I got home about why the receipt showed a much high price than the label on the meats. So, the price label on the products is the cash price, totally understandable! She also said that the lid most likely tore the seal off itself, which that has never happened to me before but either way, the seasoning was hard, and there was no telling how long it had been open on the shelf. Some of them did stick closer to the top, but once you shook it, it all easily broke apart, the one I have is almost completely solid from top to bottom. EITHER WAY, I would've loved a seasoning that was completely sealed when I open it. Instead of just exchanging the $12 seasoning after spending almost $200 there just a couple days before, she gave me a really hard time about it and was super rude and basically told me none of the other seasonings were any better like a "too bad, so sad" attitude. I just said OK and she just walked right back to the front without saying another word to me. Her facial expressions and the way she quickly dismissed me was just so uninviting and disrespectful and me and my toddler just walked out. We won't be going back there.
