The deer devastate grasslands and forests leading to soil erosion. In 2017 they were finally eradicated from the Big Island and populations on all other islands are under management. If they have to be shot, why not eat them? Maui Nui is an outstanding, local source for wild venison. Wild deer are shot then brought to a mobile USDA approved facility for processing. The flavor, outstanding. Very lean, dense texture, no more "pungent" than lamb with punched up minerality and very clean gamy flavor. Ground venison makes great burgers that pair well with mushrooms, and bleu cheese (cooked rare to mid rare). Stew chunks work perfectly to make a robust, deeply flavored hunter's stew. Tip: Local Hawaii residents, get the "KAMAĀINA fresh box" (two pounds of stew chunks and six pounds of ground venison) for $64. Regular price $200. Well packaged shipments arrive quickly with minimal shipping cost. It may be disturbing to kill a wild animal but it needs to be done to preserve Hawaii's ecosystem. Demming was incredibly helpful, responsive, and communicative, and the balloon bouquet she put together was a huge hit! Then I was working on an even more special surprise. My daughter and son-in-law are expecting their first baby, and I wanted to create a special gift that would also reveal the baby's gender. I had contacted a couple of stores directly without any luck, and even the resort gift shop wasn't able to help. So I called Demming, explained my idea, and asked if it was something she could possibly do. My idea was simple: an Aloha shirt for my son-in-law, along with a matching baby-sized shirt, so that when he opened the gift he would discover they were having a boy. Demming didn't just make it happen, she took my idea to an entirely different level! She did all the shopping, found the perfect Aloha shirt for my son-in-law, and then found an adorable baby outfit with little shorts to match. She creatively wrapped everything so that his shirt was on top, with the baby's outfit tucked underneath in tissue paper, along with the sweetest card that said, "Surprise! It's a boy!" And because it was also his birthday, she cleverly disguised the whole thing as a birthday present! What made this experience so special was Demming herself. From our very first conversation, I could tell that she genuinely cared about making this surprise wonderful. She was excited about the idea, enthusiastic about helping, and clearly wanted to make the moment just as special as I did. I was thousands of miles away on the mainland, but Demming made me feel like I had someone there who was personally invested in making this incredibly important family moment perfect. The surprise was absolutely fabulous, and I am so grateful to Demming for helping create such a special memory for my daughter and son-in-law. We tried the Ahi Katsu while at the Maui Swap Meet and were blown away with the quality of the fish and preparation of the dish. The ahi was panko crusted and cooked perfectly to keep the center raw and cool while the exterior was crunchy and still juicy. They paired it with a bed of rice, radish greens, and a wasabi butter sauce that rounded out the dish. I'm not exaggerating when I say we finished it in about 2 minutes. It was so good we found them the next day at another local pop up just to try more of their menu. This time we had their Ahi Beer Belly, their take on Fish and Chips, and I still can't decide if it was better than the Ahi Katsu. Justin used an ahi belly that he caught fresh. It was perfectly cooked through and still incredibly juicy due to the fat content of the fish. We upgraded to garlic furikake fries which was a MUST. They also offer fresh poke and the occasional sashimi plate both with fresh and generous portions. All in all, I put Shibiz as my top recommendation for anyone looking for a high quality tasting experience on Maui. Not only is the food incredible, but you're supporting a small family business, and a local fisherman. The food and vibes are authentically Hawaiian, but elevated with Justin's cooking skills.
