Amazing space, huge banquet hall with insanely high ceilings and a flood of natural light during the day. You pull up to the front door and it's like an entrance to a fancy hotel with a door person who can help with people getting in and out of a car. Almost seems like there would be valet service but nope someone's gotta park the car around the corner. Entrance has a huge seafood tank with would rival a tourist museum/aquarium. I heard there are 3 levels, the bottom being general public, and other 2 for different levels of reserved dining probably a floor just for big banquets for weddings. Tofu Spinach Soup (4*) Very simple soup of thickened broth (chicken/seafood) with delicate ribbons of spinach leaves and silky bits of tofu. Very mild but a perfect start to whet the appetite. Roast Crisp Chicken (4*) This could be a Filipino/Chinese hybrid prep. Definite soy flavor in the chicken and roasted very crisp that the skin is so rendered and crisp. The meat is on a little on the dry side but I think many Filipinos like it that way. Yangchow Fried Rice (4*) Basic Hong Kong style fried rice with peas, scallion, diced pork and small shrimps. Back in my younger days I could make a meal with just a big bowl of this. This version was okay, I prefer more wok hei but still decent. Seafood Pan Fried Noodles (3.5*) This was just okay to me. Sauce kinda muted and seafood not memorable. Just average. Sweet & Sour Pork (4.5*) I usually don't order this for myself, but my family usually does. This was one of the best versions I've ever had. First off the pork is so crisp on the outside and so tender inside. Then the sauce was totally made in the pan by caramelizing sugar and adding vinegar and something orangish. It wasn't bright red, kinda burnt orange. And that prominent caramel flavor in the background was so eyebrow raising. Steamed Whole Fish (5*) Straight from one of the tanks, some sea bass type of fish, looked real similar to a branzino type of fish. Maybe a pound and a half to 2 pounds, so the fish was so tender and supple. Simply steamed and dressed with that slightly sweet soy and lots of slivered ginger and fresh cilantro. I love this dish anywhere I go, and here was no different. Mango Sago (4*) Don't think they automatically give out complimentary desserts, as this came out in a big tureen after we requested it. I didn't see the bill so not entirely sure. But this is a chilled fruit soup of sorts. Super fresh mango flavor like definitely not from a frozen puree, like I taste from the U.S. This is a tropical country where fresh mangos are super easy to find, thus pretty cheap too. I almost ate mangoes every day on my trip, and I know that fresh mango sensation, very floral in aroma. This soup was perfect texture, not too thick and just enough tiny tapioca pearls (sago) to not make this just seem like thick mango juice. BUT the most unsweetened version I've ever had, like the only sugar was from the fruit. But I suppose I'd rather have the sweetness be a little muted than over done with it being cloyingly sweet. I found out that this is where my family likes to go when they want to celebrate something and sit at a big table for 8-10 peeps. This type of dining is perfect for that as everyone gets to eat family style and just share everything. And let's face it, banquet Cantonese food is a favorite for any Asian culture. This country has a long history with Chinese food, from even actual citizens learning and professionally cooking in that style. I did like how I did see some integration of Filipino taste in classic Chinese dishes, made our occasion that much more fitting. I'm a big time fan. Ate at the dimsum area of the restaurant and it did not disappoint. This place is huge, they have a fine dining area, dimsum, and hot pot. We decided to try the dimsum part of the restaurant and went a few dimsum options plus individual soups. Was a fan of their siomai, we tried the pork/shrimp, nori pork, and shark fin options. Also tried chicken feet for the first time, the sauce they're made in is delish! As for the soups, they were very good! The waitress told us they're for one person but they could definitely be shared. We tried the beef and tendon as well as the roasted duck. The duck had a creamy yummy flavor to it, but I still enjoyed my beef and tended soup more. The meat was so tender! Both also come with a nice sized bok choy and the noodles were the perfect texture. Definitely check this place out if you're wanting Chinese cuisine in green hills! Our friends tried the fried spare ribs, they said these were the best of their dishes! If you plan to go on the weekday evenings and weekend with a big group, reservations are a must otherwise feel free to just drop in. The Holidays is a perfect time to feast on food. Gloria Maris Greenhills is a venue for numerous family gatherings and friendship celebrations. We stayed in the dimsum area. Two other sections of the restaurant building is the Hotpot and Fine Dining Banquet. Service is fast despite the large number of customers. Food maintains its top-notch quality and I always love the freshness of dimsum they serve. Hakaw and Xia Long Bao is an automatic choice for us. We had Chicken and Asparagus soup, Roast Duck, Fried Chicken, Fried Noodles, and Yang Chow Fried Rice. Their chefs are very good....birthday noodles are always a favorite and the salt and pepper squid, scallops with assorted veggies, Peking duck....dimsum are good. Hot pot almost close to shabu-shabu. The servers are attentive and get the orders right. The place is well lighted, big and clean. The big tv screen makes cooking fantastic helps you crave for more food to order. Not so good is their yang chow fried rice because cuz it's kinda dry, should be a little moist. I always bring my family and friends here. I advertise it when food is good/excellent. Gloria Maris is an institution. If you're Chinese, you basically celebrate your life in this restaurant especially if you live in and around Greenhills. So basically, they have 3 areas: fine dining, dimsum and shabu shabu. I've tried everything. Best place in and around the area. Everything's quite good and favorites are largely relative. For the dimsum, I really like their hakaw, siomai, asado siopao, meatball congee and broccoli with garlic. My mom loves their chicken feet. They also now have the baked pork buns like in Tim Ho Wan. You can really not go wrong with most of their dishes. For dessert, I really love their ube gelatin. I can eat a dozen easily. It's like you can never quite get enough. If not, I get the taho. The problem with the taho is that you have to get the whole bucket. If you're only one person eating, this might pose a problem. It's delicious though. read more

Decent Place when you're looking for an inexpensive quick fix for Dim Sum/ Chinese food. The overall quality of the food was okay. Ordered a cafe latte at the beginning of the meal and had instructed them to bring it as soon as it was ready. I didn't get it till 45 minutes into the meal. The food in general was okay. I'm not a fan of hotpot so I didn't enjoy it as much as my companions. We ordered siomai while waiting for the rest of the people to arrive, and that dish I absolutely loved! I'm a hundred percent positive I would enjoy their dimsum more. This is a Seafood Chinese restaurant. I recommend to take hotpot. It is not Shabu-Shabu but it's pure Chinese hotpot. The taste of soup would be key for someone, but if you understand their style of hotpot, it would be unique and very nice dishes they offer. A misconception of Gloria Maris is the idea that they're expensive. Yes, they do have expensive items, but they also have a lot of affordable items that are quite delicious. This probably explains why I've had countless meals here with my father's side of the family as he's half Chinese. The food was served barely warm and it just didn't have that luscious quality that GM is so renowned for. One-third (in no particular order) of the Holy trinity of Chinese fine dining, Gloria Maris is a benchmark for good Chinese food. Their dimsum section is definitely for the picky dimsum lover on the go. The Shabu-shabu is just simply one of the best. But their Fine Dining, ooooh, is what made them what they are today, a cornerstone in the Chinese fine dining industry. Here you can find both the old and the new; the classics prepared perfectly to the nines (I just imagined Lapu-lapu in heels) but the new, sometimes not even on the menu, might actually surprise you. The Salted Egg (yolk) Prawn Ball is not actually a fish-ball-prawn-ball, but a large, curled prawn, thinly breaded and fried, and coated with a sorcery-of-a-sauce made with salted eggyolk and magic, that is just a good reason to un-vegetarian for a meal (true story). The Fish with Tauso, which can be interpreted with any available fish like Lapu-Lapu, king fish, pompano, or even fish fillet, is a steamed dish smothered in an unapologetically salty and greasy, almost sandy, sauce which is probably the reason why God made rice; definitely one of a kind in Manila (but I must congratulate Lugang Cafe's attempt). So do look for Auntie Polly (Paulie?), or any other order-takers (you know they exist and they are different from the waiters, right?) and ask for recommendations and new dishes; they'll be glad to assist (and are brutally honest with their preferences, which I commend); you'll make the most of what tummy space you have, I guarantee.
