First visit and it was a success! Took us a few extra minutes to find it as we went down the wrong end of Dixon St, alas, finally walking through a very crowded food court we were starting to doubt ourselves if the place was even in here! .... and then like magic as we veered down the bend there it was in all its glory! Tucked away in the corner amongst all various Chinese food outlets. Small queue, so we got our order in i had the Garlic Tonkotsu Ramen Noodle with soft boiled egg and my partner got the BBQ Pork Ramen and gyoza to share. Wow such a thick garlicy broth with oodles and oodles of noodles! Delicious! My partner and I both agreed that the flavour of the Garlic Tonkotsu was way better that the BBQ Pork. So it seems like I'm the only one that's gonna give this place a poor rating, and I would dare say part of it comes down to individual preference. Gumshara is one of the rare ramen places in Sydney that make their stock from pork bones and water. The atmosphere of Eating World (which I won't let affect my rating because it's not Gumshara's fault) is not one that enjoy at all. The place is dirty, not maintained well enough, overcrowded and full of creeps. My initial reaction to the food wasn't very good either. The smell of the ramen was unlike any I had smelt before, and it wasn't pleasant. Turns out it was the bamboo shoots which I promptly removed from the bowl. I believe I should have asked for the stock to be thinned down because it was far too thick for my liking. Also it wasn't very tasty either. All I could taste was bone marrow and I honestly thought it was quite bland. The other big problem was that it wasn't hot enough. The pork was pretty tasty though, and the saving grace was the boiled seasoned egg. This ramen cost $16, which to me could have been reasonable if it had tasted a little better. I get the feeling that I must have caught them on a bad day, cos every review I've read for this place is positive. I think I'll go back again in a few weeks to give them another shot. read more

I was staying at the Holiday Inn Darling Harbour and 'Eating World' food court was right around the corner where Gumshara was. I ordered the pork tonkatsu broth with the big spare rib in my bowl. The ramen was thick and broth was heavy. A great meal before walking around downtown Sydney. I am tempted to give Gumshara 5 stars, but I'll save that for when I've found a comparable ramen place. Until then, ohmaigod I LOVE Gumshara! I've struggled to find good ramen ever since Japan 10 years ago. Some are ok, some think it's ok to use instant noodles/soup/noodles and soup with some added veggies. It's not. It is fast food, but it's also soul food. Stop ruining it. The place itself is not easy to find. It's in a food court which is on the lower ground floor of the building, with an entry on the side street. And once you're in the food court, walk through the throng of hungry people while ooh-ing and ahh-ing at the other oh so delicious looking food stalls, right through to the end. Once you see the long line emerging from a hole in the wall, you've found Gumshara. Now what to eat? The Super Mega Ramen Noodle with spare rib, BBQ pork, skewers and egg with thick tonkotsu sauce looks pretty epic. But sparing some thought for my overfed belly, I went with a simple Tonkotsu Ramen and egg. With gyoza. And chilli bomb. Must have chilli. While waiting, someone commented on how smooth the skins of the Gumshara guys were (girl talk, shush!), and as we read the description on the name card we figured out why. "It (the soup) contains a lot of collagen, which is essential to maintain smooth skin." Who thought eating ramen would be so good for you? Now I really can't wait to eat. It didn't disappoint. The serve was big enough to satisfy my blackhole of a stomach, the noodles were nice and silky, soup was thick and rich in flavour, chilli bomb was a ball of chilli minced meat that nicely mixed in with my soup and made it superb, the egg was awesome, and the gyoza was perfectly cooked. My skin thanked me for it. Or so I would like to believe. What else can I say? If I ever do anything next time I'm in Sydney, I'm having my Gumshara fix. read more

This is by far my favorite ramen place ever. I've been all over the world, even Japan (although I need to go back to try them again there). If you want to try their thick pork bone soup, you have to get there for lunch service (starts at 11:30am). I don't know how many bowls they serve everyday, but someone on yelp said 10 bowls. I got here right before 11:30am on a weekday & was the first in line. I ordered the first option, the Super Mega Ramen Noodle ($25AUD), added additional ramen ($3.50) which came in a separate bowl and a chili bomb ($2) which is a lump of spicy meat. This was shared between 2 people & we still couldn't finish it. The pork bone soup is the thickest I've ever had, but be warned, they do not over season it, so it's not super salty as one would expect. I like it this way because I find other ramen places have overly salty soups which is a major turnoff, as well as bad for your health (high blood pressure). You can request for them to make your soup less thick since they know not everyone will like it. I would prefer it thick. The bowl came with dried seaweed pieces & a whole salty egg with the yolk cooked to absolute perfection (it's hard-boiled, but the yolk is still a little runny). The egg is delicious! It also came with a skewer of fatty pork belly (2 piecese). These were so freaking tasty, I wished I had more. The outside had a slight carmelized taste. Mummmm...it's fatty goodness. There's the small pile of pickled greens, but it's only very slightly pickled. It gives you some veggies. The, there's the giant pork rib in the middle. The thing is huge & comes with a lot of meat. I thought the edges were a little dry. The middle was good, but I don't think I would order with the pork rib next time. That's my persnal opinion. We added the chili bomb later, which changed the taste of the soup. It was SPICY!!! It was good, but only if you like it very spicy. It made the entire soup spicy. We also tried the Garlic Tonkatsu during dinnertime, which had a different broth. It was thinner (although it was still on the thick side, but definitely not like the Super Mega), but just as delicious. You can't go wrong with any of their ramens. I wish I lived there so I can eat this all the time. Oh yeah, it's in a cheesy looking food court. Don't let that stop you from trying this. You will not be disappointed. read more

Be careful what you order. The tonkotsu ramen broth is almost gelatinous, it's so thick. I did see other styles of ramen on their menu and they do specify some as thick broth so caveat emptor - BUYER BEWARE. If you order the wrong dish, it could be very hard to finish because it will be very rich. It's a lot more expensive than I remember but I haven't eaten here for 4 years. After reading reviews, I can't tell you how disappointed I was to discover that Gumshara doesn't even pretend to offer anything vegetarian on it's menu. Even if they had a "veggie ramen," which they don't, it would still be based on the infamous pork soup that accompanies all of their noodles. Prices are a bit higher than for your average ramen but considering that the broth is so thick and the quantity given its worth it. There was plenty of BBQ pork in my ramen and more than enough noodles to fill me up. The pork sparerib was tender and falling off the bone. Don't expect anything fancy: a little shop inside the eating world harbour. You order your ramen, then you get a ticket and wait until it´s done (under 5 mins for us). Then you pick a seat anywhere in the mall/food court and eat it. I went with a friend and we both ordered the BBQ pork ramen. I'm not ramen maniac but I'd say it's one of the best I have had. The soup was so thick it sincerely shocked me, specially after I finished the exquisite pork, ramen noodles ad spring onion. Maybe I'd even say it was too thick. Being used to other kinds of ramen it really hit me as a surprise and even if I liked the taste and I ended up leaving some of it. You have some sauces and toppings (not sure if topping is the best way to describe them, but well) to add to your bowl which seem quite authentic. After reading all the reviews, we decided to give it a go. We ordered Tonkotsu ramen and Hakata ramen (No.2 and No.5). The Muteppou-style Tonkotsu ramen is not too bad. We like the bold and rich pork flavour which is delightfully simple, and the soup/broth is not too salty or thick to us. We don't like that it's quite oily and there are some impurities in the soup (dark bone powder?). Went in with a couple of friends and to be honest (in my estimation), they didn't like the stuff (probably because they are more used to eating Chinese food and i cannot blame them) .
