I would recommend this only for special occasions as the price is $$$$$$$$ That being said, my husband and I each had a beef and a pork rib. I don't know which was more delish. The beef rib was huge. It was well cooked, seasoned well, and without a heavy overpowering smoke taste and smell. The meat was tender and juicy. The pork rib meat was also perfectly cooked, the seasoning was one of the best mix of savory I had in a while. Instead of a special restaurant dinner for anniversary we thought we would eat a couple ribs. The adage @you get what you pay for" holds up well here. But the bill was exurban and this was before the current high price of meat & everything else. My husband said that I would not want to know what he paid which means over $100. I hope they can hang on until their supplies are more affordable. The cost will I am sure be a disadvantage. What we paid would have been or useful in filling my pantry. That being said, it was one of the most enjoyable meals we've brought home. If we could afford it we would definitely be our go-to place. We are looking forward to iur anniversary in a couple months when we won't feel guilty about paying a big price for a meal. Helberg promised a top 50 BBQ experience. While the food looked great, the flavor fell short in every dish I tried. Brisket: Dry. While the bark and smoke ring were present, neither gave much flavor. Stiff and did not come close to passing the bend test. Also was cut way too thick. Sausage: very dry. The grind was good but lacked flavor and fat. Baked potato salad: dry. Lacked typical baked potato toppings. Basically flavorless. Pickles: very good and the reason for a second star. Definitely not top 50. Maybe it was a bad day. Menus available where you enter the BBQ order line, with the wall lined with Biblical proverbs. Though some customers ate on site many others including ourselves brought our order of meats home. The selection, a Rack of Ribs, 1lb of Lean Brisket, and 6 Wings, all of which were highly flavorful from the cooking process. Pickles, BBQ sauces sweet and mustard provided, though I just used some sauce on the Brisket. The sides / desserts also looked really good and viewed the staff paying attention as they prepared each container. Meats are sold by pound, rack, via handhelds, family packs, and platter specials. Pricing is not cheap, but Helberg Barbecue is a top rated BBQ option in Texas, and via my selections the quality was noticeable. Helberg Barbecue Last Saturday, I took a little trek to the Waco area, Woodway to be exact, to try another Texas Monthly ranked BBQ joint and get another stamp on my passport. The drive through Temple and Waco was not too shabby since I never hit the Waco I 35 construction and after about an hour and a half on the road, I made it to the white gravel lot where the white tin can of Helberg Barbecue sat. I arrived just after 11:00 and the line was not too extensive. It took less than 15 minutes to go through the line, pay, and sit down with my food. Outside was a mural of their barbecue slogan that read "Salt, Pepper and a whole lot of Prayer." Inside were displays of their mascot which I think is a deer and a quote from the great Anthony Bourdain reading "Barbecue may not be the road to world peace, but it's a start." I liked their vibe already. As for the barbecue, it was just me so I wanted to try everything I knew I could reasonably finish and those items are as follows: Brisket: The 3/4 pounds of brisket I ordered was a beautifully big slab of meat and was very savory. I tried a bite of it with both of their sauces, but it was so moist and flavorful that I opted to eat the rest by its lonesome because it stood on its own. Pork Ribs: Not my personal favorite ribs I have had from a Texas Monthly joint, but still significantly high quality and the bark was yelling at me like a hound. Definitely in the top half of pork ribs I have had. Maple Blueberry Sausage: This is the second blueberry based sausage I have had this year and it was clearly the best. The maple flavor gave it a Jimmy Dean energy and felt like a perfect morning meat and perfect for the fall season. It is an item you order then everyone else orders out of pure curiosity and it lives up to that immediate hype. Baked Potato Salad: I was a little disappointed to see their regular potato salad was mustard based as a mayonnaise based potato salad lover, but their baked potato salad was a perfect compromise and exceeded my expectations. It is less creamy than a regular potato salad and is more like a casserole and I enjoyed it a ton. A perfect side. I wish I had been able to try more sides and more of their options because their Banh Mi sounded amazing, but as one guy, I knew I would not be able to eat it all. If you are a Waco resident, why are you not there every Saturday having some of the highest quality barbecue in the area. If you are a Dallas or Austin resident, it is worth the drive because it stacks up with the heavyweights of the major metroplexes. Another banger. Normally, I go to Terry Black's BBQ when I'm in Waco, but a colleague told me to head over to Helberg instead. Not a bad decision at all. One thing I noticed off the bat is instead of loaves of random white bread, everything is Martin's potato bread/buns, etc. That's an automatic confidence-builder. As usual, I ordered a bit of everything so I could try it all and still have some for later. I got brisket, the pesto-stuffed turkey (sounded interesting), pork steak, sausage, and a rib. I also got mac & cheese. Brisket was fantastic, and the ribs were really good, too. So, the turkey... I mean. (sigh) I didn't like it at all, but don't take that as a "it's not good". It's just that I didn't personally like it. To me, the pesto thing just doesn't fit. I would have much preferred a more traditional smoked turkey. The pork steak is something else entirely. I don't know what they heck they marinate it in, but it is unbelievably good. I think pork should always have a tiny bit of sweetness in the sauce, and they did that here. It was so, so good. We had an amazing dinner with family while visiting the greater Waco area. My in-laws live in China Spring and this is MUST stop. Dry style BBQ - the brisket was tender and delicious. I skipped the ribs but my family loved those. The pickles and onions are fresh and savory. I hate cole slaw but this cole slaw is UNREAL - it's tangy - almost like a chimichurri sauce and not mayonnaise-y at all. The Mac and cheese is creamy and delicious. The crowd favorite to top it all off was the banana pudding - ginger snap instead of typical wafers and I swear the whip is almost like marshmallow fluff - so delicious. HIGHLY 5/5 recommend if you're in the area. Also love all the staff were high school kids working hard with a smile on their faces - great service! My wife and I stopped at Helberg BBQ on our way to a high school football game near Baylor University, and it turned out to be a great pick. The building is large with plenty of parking and a spacious dining area inside. Ordering was easy--the staff was friendly, let us sample the sides, and explained how to order meats separately. The beans were outstanding, savory with brisket mixed in, though the mac & cheese was lukewarm and just okay. The brisket was moist with great smoke, a bit fatty for my wife but delicious to me. The ribs were fall-off-the-bone good, and the jalapeño cheese sausage was excellent. Sweet sauces weren't my favorite, but the food didn't need them. My wife did not like the self-serve bread near the soda fountain she thought it was weird even though there were tongs there that people were just reaching in and grabbing bread so she did open a new bread to get hers. Also be aware they do not have Coca-Cola. They have some kind of I guess craft sodas so she got their cola version but of course it's not the Coke that she wanted. I've been wanting to visit here for years. I finally made the trip and don't regret a minor divergence from the interstate. Everything about this place is about simplicity. Plenty of food even late night on a Friday. No silly limit of food that crushes your soul when you get to order and find nothing but scraps left. I have searched all over Texas and found one of the rare spots that actually fulfills my palate the way I like it. Amazingly tender and juicy in all the meats. I have only tasted such consistency and flavor in a few select places. The rub gave a slight sweet and spicy hint to your tongue that only blends as the meats softly melt like butter with every bite. I took a few bites and had to wait to savor the texture and flavors. I had no desire to rush through the meal. I also was offered with a surprised discount on a full rack. I only regret that I have since moved from Texas and this place will haunt me until my return. The restaurant is about family. This isn't a commercial place looking for popularity. A few weeks ago I saw a video on Instagram of the brisket smash burger at Helberg BBQ ( 3 hours from our home) and thought, "Wow, that looks amazing." I sent the reel to a bunch of friends and before I knew it our weekend was planned. I rented a house in Waco, folks flew in from Florida and Illinois, drove in from Dallas and Austin and we headed to Helberg. To say the burger was worth it would be an understatement. Brisket jam, 2 perfectly smashed burgers with a slice of cheese on an incredible roll accompanied by tallow fries--heaven! It was so good we all came back the next day to try everything on their menu and I do mean everything! Ribs, sausage, brisket and all the sides (best street corn ever). I foolishly mentioned to the delightful manager, Anna, that I was not a fan of banana pudding--apparently I was mistaken! Unbelievable banana pudding with ginger snaps--too good. Add to this some of the nicest people you could ever meet--I love when young folk find their passion and share it with all of us. Spotlessly clean indoor seating and super comfortable outdoor seating with lots of room for the kids to run off that banana pudding, Helberg has everything.
