This little family owned restaurant in the town of Tellaro, just nailed it. I am normally a fast eater, but on this night with this dish, I savored each bite of this magnificent fish. Now, anyone can make risotto. Give me a box of Uncle Ben's and some chicken stock and even I can bluff it. But, to do it right, I mean really right, it's like trying to split a hydrogen atom. The degree of difficulty in the ratio of stock to heat, to stirring to simmering is more complicated than an Astro-Dynamics calculus formula. Osteria La Caletta made a PERFECT risotto. A 10! Creamy, soft, delicate, complicated, delicious. So, it now replaced the Sea Bass which was on my "Death Row - Last Meal" exactly 1 day.
