I don't know about the JX Ranch Bunkhouse B&B but I do know beef and JX Ranch Natural Beef is an excellent choice for all natural, grass-fed beef. I live in New Mexico and researched and sampled a good number of grass-fed beef offerings. Most were as a lot of folks expect grass-fed beef to be, tough, dry, and if they had any taste at all it was a real gamey taste. When I tried meat from JX Ranch I knew my search was over. Growing up in Kansas, eating beef that was raised by relatives to be consumed by family, I didn't know that everyone else wasn't eating near as good as I was until I left the nest and fended for myself. The beef at JX Ranch takes me back to the beef of my childhood when beef tasted like beef. You owe it to yourself and check out their website and then compare to others. These folks take as good of care of their cattle as anyone can and better than most. As a hunter I know how important it is for an animal to be calm and at rest when harvested, stressed animals will taste of adrenaline and be gamey tasting. And JX harvests at a younger age than others at the same price point resulting in much more tender meat. I have purchased some of their meat packages and last year graduated to a quarter beef and have ordered another quarter for this fall. This beef tastes excellent and because of the way it is raised and processed, a healthier source of nutrients. I grew up on home raised meats and it does indeed make a difference. I have prepared most of the cuts provided by JX and all have been outstanding. I even got some marrow bones and they were perfect. Roasted and spread the marrow on garlic bread and it tasted better than butter. Threw the roasted bones in a crock pot and cooked them for 36 hours and got great stock (bone broth). The kabob cuts serve as small steaks for me, browned in a cast iron skillet and finished in the oven for 5 minutes. Shrinkage is minimal due to the 21 day aging and the meat is very tender and needs less seasoning than conventional beef IMO. There is very little fat on most cuts although some is available in the roasts. What fat does render out is clear and it solidifies very white. I save it all and either add it back in to roasts or ground beef or use it in other dishes. The pricing is very reasonable considering the processing costs including the aging time. This is the place to go to rise beyond the martial world and be one with nature. Beautiful hikes up to the flat tops are just a five minute walk from the cabin. The cabin itself is so quaint and charming, with cowboy decor, tiled cabinets, vintage wooden floors, fireplace, journal entries of past visitors, and options to enjoy some of their own grass fed steaks...which were incredible. I didn't feel the need for anything more except for more time out there and friends to experience it's magic as well. I can't forget to mention that they allow dogs and something that i also treasure was hearing the turkeys in the early mornin! Mimi and Tom were gracious host, bringing down extra breakfast items when they saw there was more than one guest, which were farm fresh eggs, cinnamon rolls Annnd bagels! read more

Can't even begin to tell you how wonderful the quality of this JX Ranch Beef really is! We order the tenderloin and sirloin steaks, kabob beef, and small roasts! My sister gets the ground beef as well. The steaks are tender, juicy and wonderful!!! The kabob beef is so tender that you can use it as small steaks or in stroganoff and other recipes; of course, the beef and vegetable kabob is killer! We have ordered twice this year and hope to continue!!! We live in Albuquerque and Mimi is such a delight to order from and offers recipe suggestions and cuts our roasts to the size we want!
