I guess I didn't realize how little input we'd have - each course came out and you could tell what they were doing in the beginning - cheaper fish in massive fried rolls with lots of rice. Second portion was also entirely fried - designed to be heavy. When nicer fish like tuna started coming out - it was limited to one per person or often mixed with plenty others that were just covered in other ingredients and sauces.
