We asked about "aji amarillo" and he explained it was one of their several accompanying sauces. He promptly brought a sample in a ramekin with two spoons. It was very good. Mild and similar to a weak but flavorful mustard colored chili sauce. Other sauces included hot honey and cilantro & garlic aioli, great on their chicken and bbq ribs, my selected entree.
