    My husband gifted me a 4 day Artisan Baking 1 class. After doing the British Baking Classics last summer, I knew I was in for a treat. My previous 5 star rating of King Arthur Baking School remains! Absolutely fantastic 4 days of class. Tons of information, lots and lots of hands on work, so. much. bread. I've never been in such well run cooking classes. These are a treat for sure. The instructors are great. We had three over the 4 days. Leah, Jen, and Geoff. Jen and Geoff in particular were super personable and approachable. In total, we made 2 cookie sheet sized lavash (crackers), a lunetta, foccacia, 2 baugettes (plus as many of the practice ones you wanted), 8 croissants, 3 sourdough raised boules, 2 overnight ferment sourdough batards, 2 whole wheat batards, and pizza. Each day you would get to sample the instructors bakes and take yours home. Additionally, the instructors demo'd a few dishes for us to sample. Those were Tarte Flambe, "crazy bread" from our croissant trimmings, pizza flavoring, and cheese, and almond Bostock from day old croissants. This time around we got a full tour of the building which includes a Canlis test kitchen, the Bread Lab, and a really neat wheat seed library. I will be returning for more classes in the future!

    I was really excited to find out that King Arthur Flour has two baking schools in the United States and one of them is within driving distance of my house! I finally got around to taking a class and I have to say it was AWESOME!!! My daughter-in-law and I drove up from Seattle on a rainy Saturday morning for the Flatbreads of Italy class. It was taught by a professional baker who was super knowledgeable and really good at sharing technical information in a way that is understandable by people with little or no background knowledge. The facility was spacious and well-equipped. The lesson was well-planned. First there was a demonstration and then we went back to our stations and practiced the skill. The pacing of the lesson was perfect...we finished at 11:57. We can't wait to go back! We're planning a weekend trip for four or five classes in the spring!

It's always a joy to see her booth set up at a local vendor show or farmer's market. And it's easy to order products from her website if I run out between shows! My favorite to order is one of her creamed honeys (my favorite is the Cinnamon). And at a recent Christmas craft show I bought her Gardener's Wax salve which has been wonderful on my dry skin this winter! I also love to grab a bottle of her fabulous Honey Oxymel as a gift for my mom, who uses it to make lovely salad dressings. I even took a cheese-making class from Marissa once, and hope at some point to have time to do it again! Marie's Bees is a wonderful, local, women-owned, family-owned business that I hope to "bee" able to support for years to come!

During our class we learned the basics of making mozzarella cheese. Repetition always helps me learn, and in this case we were able to repeat the process a couple of times which really helped me feel confident in home-made cheese making. We learned how to check the process as we worked through to make sure things were progressing as they should. Knowing the steps and how the cheese should be looking was a big help. We learned how adding honey to some cheese varieties can provide an unusual and tasty addition. It was eye-opening to see how much milk makes this much cheese (no wonder cheese can often be expensive!) During our class, we made a couple of batches of farm cheese with fruit and herbs (from the on site garden) as well as a batch of mozzarella (some in balls and some in string cheese form). These are highly interactive classes with lots of opportunities to take part in the process. If you like learning and doing, Marisa's classes are the best!

Chef Laura is attentive and diligent to every detail and accommodates my father's often changing and special diet requirements with grace and ease. Three years on, my father continues to eat wonderful nutritious food that meets his special dietary needs - and he refuses to eat anything but Chef Laura meals! A retail space in the beautiful new Atrium it's bathed in light with high ceilings and almost floor to ceiling glass front windows. With cooking classes, and a full kitchen, this is sure to become a great spot to spend your time. They have a ton of excellent quality kitchen tools, a small but good selection of cook books (unless I maybe missed some?) and a lovely selection of locally produced food items. I chatted with a really friendly girl at the counter about how their new shop was doing and she was excited to tell me about their success and the things they offered. I somehow managed to leave empty handed, but this is a great new addition to the Victoria food scene, and sure to inspire curious cooks to be more creative, better equipped, and very well fed. They are embracing local food, seasonal ingredients, and looking to serve the local food community, which earns them a solid five stars.

I was…read moreso surprised to find a class that would work for me, prices were high, but the location and concept sounded like such fun. I was able to score a Black Friday sale and opted to check it out. I often take my partner to classes like this, but since it sounded so intimate and it would be my kind of people I opted to go by myself and still had a great time. I guess it opened about a year ago, but I had not heard anything about it until I happened to drive by and I am in Edmonds all the time. This venue is so cute on the inside with plenty of easy street parking on a week night. I appreciated the check in beverage and snack while we waited for everyone to get there and get started. There are alcoholic options available for purchase and I must say this does make this class slightly superior to some others that do not offer these type of beverage options. They also give you an apron to wear so you don't have to stress too much about wearing something appropriate for cooking. The huge table for 12, allows for great views of everything and really gives you a chance to interact with your seat mates if you are into that kind of thing. This place is big so you don't feel like you are confined to your seat in a claustrophobic room like some other class room settings. The class I took was My Big Fat Vegan Dinner, I have taken lots of vegan cooking classes, but none quite as fancy as this. I appreciate that they show you all the ingredients ahead of time and give you a hand out with the recipes. We even sampled some of the vegan feta ahead of time, vegan butter was also present. Its a full meal experience, so you socialize, cook and eat. Our class was taught by a local chef and we learned a lot about him and his philosophies on cooking. We all helped with the prep, with some people taking on more intensive jobs and others just helping with the cutting. We learned quite a bit about different ways to chop things, even made a stock with the leftover cuttings. I absolutely loved the pita bread we made, who knew it was so easy. The pickles were delicious and this is definitely something I am planning to make at home in the future. I've never even had vegan spanakopita before. Everything was tasty and I certainly left full. The dessert we made was even served with 2 kinds of vegan ice creams. We were also lucky enough to take home some leftovers which made for a delicious lunch the next day. I've been telling everyone I know about this in the hopes that they will continue to add vegan friendly classes, but even if you prefer different kinds of food you should totally check this out. I am already eying Vegan in the Spring and trying to convince myself to sign up.
