    Previously known as the Kam Fook restaurant and now renamed and with new owners. Still a great location with a group for Yum Cha. The restaurant is large a can easily handle a number of large groups workout becoming too noisy. Typically yum cha fair and very nice.

The yum cha is tasty but can get a little pricey. Overall some pretty good dishes. When I went for dinner, we ordered the peking duck, which I thought was pretty tasty but my cousin said it wasn't presented properly - with one slice of cucumber and no green onion, and too much hoison sauce. The lettuce wraps were a bit salty and didn't have the traditional water chestnuts. The seafood chow mein was good, the veggies were a bit bland. Overall it was a decent dinner, but nothing spectacular. One exciting thing was that the bathroom had toilet seat covers!! It's probably more exciting for me as an American living in Sydney and missing toilet seat covers.

The food was always good, especially the weekend Yum Cha. It just seems to be a lot more efficient. I've never been to YumCha (Dim Sum) and had one of the cart pushing "aunties" ask from across the restaurant whether I wanted more. Usually they glide on past and leave you hungry. Imperial Signature is really worth the effort if you're into Yum Cha. It's best after 11am when the carts are full and the kitchen is heaving.

Came Sunday at 9:30, already a quarter full. I had har- gow, chicken feet, trip, lotus leaf sticky rice (lo mai gai). The chicken feet were perfect and the har-gow full and plumb with shrimp. I like the way they do the lo mai gai. Smaller portions, devided between 3 wrappers instead of the usual 2. So you get more filling to rice ratio. Plus they wrap the race in parchment paper before wrapping in the lotus leaf, so it's much easier to peel apart. The trip was a little disappointing however. The flavor was very good but good, but should have been cooked a bit longer, as some of the pieces were still quite chewy. I patiently waited for the egg custard to come out, as they were still baking them. Worth the wait, they were perfect! Light flaky crust, and perfectly light and tender egg custard. Plus, they were the "normal" palm size tart...not those mini ones, that many places switched to, to save money. Honestly, these were the best I have had anywhere! As I was leaving at 10:45, the place was buzzing and almost full. They were also bringing out many more items, such as stuffed bell pepper (with shrimp) and stuffed egg plant (with pork). They also had special carts that would make stir fry noodles or steamed vegy at your table. Makes it feel like Hong Kong, which was the last place I saw these, in the early '90s.

I really was not a fan of the Sichuan Mala one. It was gamey in taste. It actually made me think I was eating lamb instead of pork. Veggies were standard. This is a place I can say I've tried but don't plan to try another one.

North Sydney's a cheap Opal trip away from a heady world of delicious dumplings in Chinatown, and closer still to a classy joint like Uncle Mings, where you can have your bamboo steamers and a crisp lager to go with it.
