Once we were a couple weeks out, I was hoping to be able to nail down a timeline. His assistant kept telling me I would hear from chef, but I didn't hear anything until the afternoon of the event. I was scared that he just wasn't going to come and we would have to scramble to find dinner plans. I guess there was a mix up in files but at the end of the day, chef came and gave us an amazing experience. He accommodated my dietary needs (vegan and gluten free) with enthusiasm and it was my favorite meal of the trip. You can also tell he is super passionate about his job and he has good energy.
