This is a place for people who appreciate their food and the experience, not for the tourist masses that are looking to get fed quick and cheap. It is an interesting set up as they have dining rooms on both sides of the street. I was in the one on the east side of the street and taken downstairs into the basement which has the looks of a refurbished ancient cellar. I had a 2 top in the corner to myself with a great view of the room so I could appreciate what everyone else was eating. I had a very civilized time. Frenetic Tapas this is not. There are white linen tablecloths present, a small container of housemade chimichurri, menus on line, great wi-fi service, a full bar and wine list, and menus that are bovine centric. I had an Argentine Negroni (the Argentine nod is due to a splash of Fernet Branca giving it a slight minty taste on the back end) and a glass of affordable, high ranking Tempranillo. These were perfect with the olive and bread starters with EVOO/Spanish vinegar on the table to mix to taste and also served with compounded butter. I was there to eat and the Mollejas (veal sweetbreads) are a must in my opinion. They are listed as a house specialty and come on a charcoal heated sizzle plate served with a side of broad flaked sea salt to finish to taste. Crispy edges and creamy textures throughout with a hit of grilled lemon and they were simply sublime. I also took down an Entraña (skirt steak) that seemed larger than its described 300 grams. Also served on a sizzle plate it was perfectly cooked by some expert grill guys upstairs. To ensure that I ate something with color, I had a salad on the side that I dressed to taste with the EVOO/Spanish vinegar on the table. The service here is friendly, professional, and not overbearing. My meal was about $85 USD which is pricey by typical Madrid eating standards but it was worth it considering the quality, quantity, and variety of what I experienced. Staff were gracious and welcoming to two tourists. Cochinillo was sublime. Whole suckling pig is roasted so the skin is crisp on the surfaces, but moist and flavorful next to the meat. You are served an ample portion of the ribcage. At this age many of the small ribs have not calcified, so they are tender to chew. Succulent and delicious. Tripa are also cooked low and slow so they melt on your tongue. Sauce is majestic. Our waiter was very cordial and we took his advice to close with the ponche, and we were very glad we did. A soufflée with a wisp of orange zest in the ice cream was the perfect closer. Bravo.

Duque is unique in its heritage, its ambience (indoor, white linen table cloths, nicer dresses wait staff), and the offering of the traditional suckling pig. We made reservations and due to a goof on my part we had to delay it a day. They accommodated without a problem and communicated through email. That said, we ate at around 2 pm and I don't think we would have had a problem if we just walked in without a reservation, but this probably depends on the tourist volume and season. My wife and I ordered the large beans and the suckling pig and salad. It was A LOT of food. We really enjoyed the large beans and the traditional cooking approach using a pork extras broth. The suckling pig lives up to its reputation. The meat was super tender and the skin was very crispy. My wife and I couldn't eat all of our portions, but what we did eat was fantastic. We also had the beer and it was quite good. We ended the meal with coffee, which was very good. We did not eat dessert but it looks like they had some good ones. We probably stayed there for about 90 minutes, which was a nice way to take a break from the beautiful but dominant sunshine. This was probably the most expensive place in Segovia to eat, but we thought it was a great experience and value. As a final thought, we didn't do a very good job as English speakers trying to communicate in Spanish, but with context clues and their willingness to talk a bit in English we managed.

We had the nachos, mozzarella sticks, French fries, bread and asparagus. The prices were very reasonable and their beer selection was great. The owner greet us and made us feel at home. I highly recommend and if I could give this place 10 stars I would. Our time in Madrid is limited, however we will make sure we eat there again before we leave.
