The pieces were inconsistent in shape and thickness, and you can clearly see ragged knife work and excess connective tissue that shouldn't be there in a premium cut. A true filet should be clean, round, and tightly trimmed, but these looked more like end scraps pressed together rather than proper medallions. For the price of filet mignon, I expect professional butchering--not rough cuts that cook unevenly. Definitely not the quality I paid for, and I won't be purchasing this cut from here again.

We also say the cows and calves in a different pasture and they were adorable. We fed them carrots and oohed and aahed at the cuteness of overload. Don't forget to also visit the peacocks and peahens when you visit. Great place and wonderful people. We visited on a rainy day, and were a bit worried that we wouldn't be able to interact with the cows. However, on colder days they just move the cows inside. Lucky for us, we were the only ones there! So we really got to soak in the time with the cows uninterrupted. They are so SWEET, and have no problem giving you a little bump to let you know they want a scratch/massage. The price is well worth the money for all the health benefits it brings. I can't wait to come back on a sunnier day too!

Animal Farm is actually a 70+-acre property complete with a permaculture center, yoga center, extensive certified organic garden of arugula, tomatoes, legumes, summer squash, sunchokes, sweet peppers, swiss chard, tomatoes, turnips and other foods that you'll find at local (including Houston) farmers markets and on the menus at several Houston and Austin restaurants - Local Foods, Haven and Sorrel Bistro, just to name a few. A few weeks ago, I had the opportunity to check out Animal Farm for a tour and a seven-course farm dinner hosted along with Roots Bistro, 13 Celsius, and a few other local participants. It was a unique and educational experience in which we learned about the 20-year history of Animal Farm and its permaculture techniques directly from founders (and former Houstonians) Guita Van Woerden and husband Cas. Not only do I looked forward to attending another Animal Farm dinners (about $120 per person), but on my next visit to an Urban Harvest farmers market, I'll head straight to their booth to purchase some freshly harvested and delicious arugula and sunchokes.

They use permaculture principles as part of their farming practices. I admire them for what they do. Frankly, when I start my farm, I would love to utilize their techniques. I've visited the farm twice for farm-to-table dinners last year. The owners are lovely and laid-back. Both times I went, Gita offered a tour and provided a brief overview of how Animal Farm started. It was her idea and she is truly an inspiration. She had no agricultural background at all. The property is about 70 acres and only 20 acres is being used. I believe they live off the grid by using solar power. They offer a CSA program. They grow herbs and all sorts of vegetables and fruits. And also a huge variety of the most beautiful flowers I have ever seen!!! I have been buying produce from them every single time I go to Urban Harvest. Some of the vegetables are: jerusalem artichokes, cauliflower (in different colors), rainbow carrots, green onions, broccoli, arugula, romaine lettuce, beets, turnips, different radishes, bell peppers (all colors), shishito peppers, tuscano kale, dragon tongue beans, cucumbers, eggplants, all sorts of squash, etc. Some fruits: blackberries, jujubes, mulberries, a variety of tomatoes, persimmons, fijoas. I highly recommend you visit their farm in Cat Spring and check out their farm-to-table dinners. Follow them on facebook to see upcoming events. Have you ever been to the mountain top? Have you ever seen…read morethe valley from on high? I have! I've seen the view. I've had the experience and let me tell you, the view from up there... is breath taking! In this case, tongue taking! I came across Old 300 Ranch from none other than Facebook. Facebook? Yeah. I'm shocked too as most of my food leads have come from Yelp, word of mouth or just passing by. This place here snuck up on me from left field. (I know sneaked is preferred but in this case...snuck is what happened.) Let me get right to the point here... FRESH! I'm talking right from the ranch freshness. Perfect sausage and jerky made completely fresh to order. All the ingredients are grown right there on the ranch. Picked and sliced right to your own personal order. Oh and if you have a unique taste or flavor you want to add, just ask. Whew! Where, where where can you find anything as fresh as that without having your own garden and farm in your backyard? What you just read right there... is the mountain top. After I place my order Joey (owner) was happy to prepare my sausages and jerky literally the day prior to my requested time to pick them up. He asked me if I wanted them smoked or if I would smoke them myself. I told him I would smoke them myself.. He replied, "man you're serious, I like a customer that's serious about his food. I will be sure to make em, big and plump for ya!" Well, let me tell you he did not disappoint. They were simply ... remarkable! My order consist of scallion and garlic sausages, jalapeno and cheese sausages with extra jalapenos, and a pound of Cajun Hot Jerky. I smoked those sausages immediate when I returned home from meeting up with Joey and his wife at a halfway mark from the ranch. Let me add that on my drive back, I opened up a pack of the fresh made jerky and almost drove off the road when the flavors set off an explosion of spicy flavors in my mouth. I messaged Joey that he's been holding back from his fellow Americans and their constitutional right to have those babies on the shelves at every jerky spot in the country. He makes the very best jerky I've ever had since I've been on this planet. If you're a jerky eater... it's a MUST try. Best jerky ever! Now back to the sausages. I added no seasonings to either of the sausages I ordered. I added no sauce to them at all. Neither were required. My first bite of those babies launched me into orbit! I must have circled the earth 3 times before landing on earths highest mountain top. From that point I looked down and saw a valley of pre-made sausages, mixed with preservative, fake, supposed to be organic sausages. ALL at that point was beneath me. Everything was moving in slow motion. I could see clearly now. The vale of preservatives was lifted and FRESH became the new factor in sausages. Made with fresh grown spices and herbs made right on that ranch. I didn't even finish my plate before placing another order for another 6 packs of sausages. I even requested some made with fresh habanero peppers which he in-turn created from my inspiration the "Serrabanero" sausage link that he's adding to the menu. I've yet to try them, but I will be sure to post a pic and comment on it once I've cooked them. Before I do, I need to find myself a space suit in preparation. Eat Fresh... And Prosper!

As my daughter has recently decided that is her thing, I picked one up. Noticed it had to be refrigerated, and not sure why but that created only moderate expectations. Took almost a month before I opened it. Used it to dress a Bratwurst and Veggie Bake. And I quickly regretted not opening it sooner. This was FANTASTIC. Mildly spicy with a notable tang, it was delicious. Had some the next night atop some mousaka. Between my daughter and I, we polished off a bottle in two days. We'll definitely be back to Urban Harvest for more.
