Food was ok (a little bland) and they use spaghetti noodles instead of rice noodles which I didn't like.

VERY happy, and pleasantly surprised by how much! I had reasonable hopes from the previous reviews, and would have been satisfied with "pretty decent", but that sells Linh's far too short. We got combo fried rice and lemongrass lo mein, both of which came with a little spring roll. The spring rolls were pleasantly crispy, a good balance of filling and wrapper, and both the rolls and the fried rice were almost Japanese in the seasoning: just enough salt and aromatics to bring out the flavors. Subtle, and delicious! (If you like American-style fried rice, add some soy sauce!) On the other hand, the lemongrass lo mein... WOW! It was nicely spicy, not too much for SE Asian style, and the lemongrass/chili flavor just exploded in my mouth. The noodles were cooked as perfectly as I've ever had. Decent amounts of well-cooked proteins, might have liked a touch more vegetables, but this was 9/10 food from a trailer parked by a bowling alley. Gotta love it! read more

Man, we had too high expectations for this food truck. I think it gets such good reviews, because it serves a distinct cuisine for Truth or Consequences, because it is mediocre Asian fare. The pad Thai was uninspired and the veggie wide noodles were even less inspired. The spring rolls were bland. Also an Asian joint with no chili oil??? Really? Meh. read more

Absolutely great food, decent price for the quality. I particularly like their Kung Pao plates, it's enough for two.

Rice and noodles in TorC... yes, please. It's a food truck serving Vietnamese food (w/ a few Chinese options). The shaken chicken (usually made with beef, nice to have a choice) was delicious. The menu is small, but they have some great option. Entrees are $12 and portions are generous! They were out of spring rolls, so I have to go back and try them. They are open 6 days a week. What an awesome addition to TorC. read more

I've been to Linh's Noodles a few times now, and I've never been disappointed. The food is always delicious, the service is friendly and attentive. I've tried a variety of dishes on the menu, and I've loved everything I've had. My favorites are the pho, and the beef lo mein. read more

I ordered rice noodle soup, or Pho, two weeks ago. I think they should leave the broth plain and give you condiments on the side so you can fix your own taste instead of making the broth very spicy. It's just too spicy to me, white & black peppers. Today I ordered Pad Thai, again, very spicy! This is not the way "Pad Thai" we cook/serve in Thailand, I was a bit disappointed. They should prepare plain stir fried Pad Thai, serve with condiments (options) such as roasted ground peanut, ground dried red chili, sugar, fresh bean sprout, and fresh cut chives. May be other customers like it that way. I thought I just wanted to share my opinions. Good luck! read more

Run don't walk to Linh's!! Thank you Yelp for helping guide us to this food truck, as it was a highlight of our short stay in TorC.. It's discreetly tucked behind the side of Sidekixx bar, but worth the search. The asian pad thai we had was the real thing - delicious, seasoned beautifully, authentic and utterly satisfying. We took it back to our motel to sup on, and were thrilled to find such good asian food in a relatively small town. Will definitely return next time we're passing through. Thank you Linh's! read more

This place only has two other reviews at this time and I have NO idea why! At least 3 people ordered food in the 10 minutes we were waiting for ours! We were in the mood for exactly what they were selling. Food was great (we both had tofu because we like it, not because we're vegetarians.) The spring rolls were delicious, as were the crab Rangoon. We also had the crispy noodle - cute little birds nest! As well as the vegetable tofu. Please give this little truck a try! read more
