There was a kiosk with food trays under covers. Big sign advertising Caribbean food and jerk chicken. About the last place I expected to find Jerk Chicken. Took a sample of the jerk chicken, and was in food heaven. Pricey at $20 cash only for one large piece of spicy delicious, finger licking dark chicken meat, together with large sides of tasty beans-rice and tasteless cabbage. The chicken thigh was covered with a thick blackened layer of spice, almost too spicy, it overwhelmed the chicken thigh. Addicting. Had to carry four TV dinner like trays 1.2 miles back to the timeshare, as wife had lost me. We were in the area of Kauai where our cell phones on Tracfone didn't work, so couldn't even send texts, let alone phone. This jerk chicken is sweeter than our local back-a-yard jerk chicken. Dark meat marinated in a sweet sauce. Don't get used to it, as only available at catering events in Kauai, with no home restaurant.

Served with yellow rice (not too fluffy, not too sticky, but just right!) and a bed of steamed cabbage, this chicken is amazing. The sambousa is heavenly with seasoned mixed vegetables and drizzled with the jerk chicken sauce. Everything is locally sourced when possible. Atmosphere? No place better than under the glow of Hanapēpē and its streetlights with happy people bustling about. I'm yet to sample Koropo's at their physical location.

As we were waiting for our order we saw her handle cash and other customers' pens/credit cards without washing her hands or put on new gloves before returning to food prep. During normal times this is pretty gross, but during COVID times it feels especially unsafe. The truck was open in the back and we saw flies buzzing around and land on the prep surfaces and kitchen utensils, and to top it off a few chickens also managed to hop INTO the truck itself to peck at crumbs on the floor of the truck. Kind of gross. We understand that running a business is hard work and it's a crushing time with tourism, but cutting corners around sanitation is unacceptable and should be called out.

The fried Spam musubi was so good that I'm not sure I can eat musubi any other way now. The spicy mayo poke was fresh and flavorful, making the whole plate a pretty solid value. This is one spot I'll definitely be coming back to every time I come back.

The shave ice with cream was just the right size and sweetness. Ask for as many syrups as you want to put over the whole thing. Ask for cream ( Milk) over the hwole desert/drink. It was awesome and freshly made. I could really tell the differences in the flavors of the syrups. We got comped a whole heaping serving of chili - chili with cheese, sliced up hot dogs over tortilla chips, and everything was generously covered with this. My wife and I were in the car when our 3 year old fell asleep and we saw this truck in a Church parking lot. So glad we did. The Hamachi Nigri was incredible, super fresh and delicious. The Spicy Ahi roll was also amazing, tons of Ahi in the 10 pieces you get with an order. The rice for both orders was cooked to perfection which is always a bonus. Had we not eaten something just before my son's nap, we would have gone back and ordered more. Give this place a try and you will surely be amazed as we were! Mahalo!
