I love everything about this place. Nestled inside a town with more open area than actual restaurant, lays the Musubi Truck... A "food truck" that does Musubi in a bunch of different ways. We had just eaten breakfast, but we saw this close by and had to stop in. Who doesn't have space for Spam Musubi? We all bought 1 for to-go, and... "When in Rome..." kicked in and we got a deep fried Spam Musubi. This "ish" was great. The breading was so crispy and light it was just perfect. I would 10/10 order again. Really wanted to love this place but we have had better around the island. Rice texture is not good. Spam musubi the rice and sauce wasnt well balanced Hapa : spicy was ok. The ahi lacked depth of flavor. Way too many onions. Service was friendly until we were accused of feeding chickens when it jumped on our table to try take our food. Tables should have spray bottles. The service here is quick. We were told 15-20 mins and it came out in 10. The spicy poke tasted fresh and everything was packed with flavor in the Lifeguard Bento box. The chicken in the katsu musubi was a little dry, but that was fixed aided by sauce they give with it. This is a fun spot and I can see why it's rated so highly. The musubi is absolutely delicious, I had "Da Bomb" which was so good. I would have loved to try one of everything, though, since everything looked good from the bento options to the ahi katsu. The service definitely took forever, I wouldn't recommend coming here if you're in a rush (small truck, only 2/3 staff working at a time). Musubi Truck was our next stop in our Koloa food tour but if you aren't able to make it to Koloa, they have multiple locations around the island. We parked around the main town where all the shops are but there is a parking lot in the rear. There's a couple of patio tables on gravel but when we visited last time, there was an active wasp nest nearby so be careful! OG spam musubis are pre-made and only $3 so if you're looking for a quick snack, this is perfect. Not the best but not the worst. It's on the smaller side but for $3, I wasn't expecting something hefty. If you have time, try one of their specialty or deep-fried musubis. Each order will get a buzzer since those are made to order. The deep fried was saucy and crunchy, so much better than the original. I also tried the Chicken Katsu musubi. Specialty ones are double sized musubis, meaning you'll get two of them so perfect for sharing. Great for a quick snack or a meal to-go. read more

This is a famous food truck in Kauai near Poipu Beach. This is situated in Old Koloa Town. They have a lot of clothing stores around and also few food trucks around. Parking is a little challenge since this is a popular spot and the prices are not too expensive since everything in Kauai is expensive. We ordered the passion fruit slushy with li hing and it's very good, highly recommend. I ordered the local poke bowl, it tasted fresh and the portion is just about right and the flavor is very good. Musubi truck perfect for a light bite after touring around Poipu side. My daughter just wanted the OG mususbi and a slushy. Too bad the slush wasn't a guarantee that they were gonna have enough since they had like 4 orders hold that prior that were still waiting. So we had to pass on the slush - will try again though! Anyway, the musubi was BOMB. Was the perfect amount of rice with the seaweed fully wrapped around. We didn't have to wait for our musubi because was ready already. It would be hard to come to Hawaii and not have at least one musubi. This truck is, in actuality, a trailer (at this particular location), and they're slinging musubi everywhere. We came right at open and got just 2 musubi to snack on before a snorkel tour we were going to take that morning. The service was quick and easy, and the vibes were great! The little area they have around the truck has a few large picnic tables that are easy to sit at and enjoy your food! The musubi itself is made in a very similar way to how I was taught. They use a plastic rectangular press, and then wrap a large piece of seaweed all around it. Teriyaki sauce and furikake is included too! Super simple, and still super flavorful. I was happy to see that the process was standard (or happy to see that my process matched). Biting into it, the rice was a great texture, and those sweet and salty flavors are so iconic. I really enjoyed their 'spam', can't quite explain why it tastes so much better than others. The tots are solid and hit the spot while we were there.
