While walking the snowy downtown streets of Denver we kept looking at the signage for this business. We wondered about the connection between mermaids and cupcakes. Later while walking with a friend of ours, she offered to buy cupcakes for my wife and me. Who are we to argue? Just inside the building's doors, you feel like you have walked directly into their kitchen and prep area. Turns out that is the case. I liked that you could literally stop and watch them make their delicacies. It was immediately clear that they were in the business of making high-end desserts. Their display case was full of about a dozen different varieties of cupcakes - which all looked fantastic. The three staff members we encountered were delightful. Our friend Nancy bought three cupcakes - one for each if us. I kind of zoned out on which ones they selected because I had chosen a cinnamon churro cupcake and it was amazing. One of the women there told us they taste their best at room temperature, so as we stepped into the lobby I said, "Feels like room temperature to me." and thoroughly enjoyed my selection. My experience with Mermaids bakery was pretty lackluster to be honest. I called a week in advance to order Red Velvet cupcakes for my husbands birthday as they are his favorite. I requested they say happy birthday and they assured me they would look like birthday cupcakes and say my desired phrase. Well I pick up the cupcakes and they don't say anything special, they don't look like birthday cupcakes, I mean they honestly look like I made them myself at home. I was hoping at this point that they would at least taste phenomenal, but they were average at best. I honestly felt like I should have just bought cupcakes from King Soopers because they would have tasted and looked the same and probably been about $45 cheaper lol I was hoping Mermaids would be great and I could use them for our son's first birthday smash cake but I have no desire to order from here again. And a side note; they somewhat hassle you about your pickup time. My pickup time was 12:30 on Saturday and I got a text as 12, and a call at 12:22 to remind me that they close at 1pm. I arrived at 12:24 (6 min early) to get them so I didn't really appreciate being harangued when I wasn't even late. Delicious cupcakes!! Not only are the cupcakes beautiful aesthetically, the taste is spot on! The best part is they're not too sweet!! They also freeze and defrost really well! To help you prepare for your visit, I'll say the location isn't ideal for picking up unless you're already downtown. I so so luckily got a street spot right outside. Just be prepared to look for a parking spot downtown which is never fun. read more

Bought a cake (and with the tip) for $194 for a big event. The name on the cake was misspelled. Really, really embarrassing. And very expensive mistake. While this person has an unusual name, Mermaids could have called or emailed to confirm. In fact, I was there for a 9 am pick-up (and it wasn't ready even though I confirmed). They could have asked about the name or had me look at it. They did not and I didn't think to ask because I had to wait for the cake and was then running late to the event. This is by far the best bakery in all of Denver with the possibility of on all of Colorado. We order cake for a four years olds birthday and it a work of art and as pretty as it was it tasted better. Ordered these for my husband for our anniversary. He moved to Denver over a month ago, from Texas, and has been trying to find us a house to rent but it's been hard. Got several cupcakes to taste test for a party order. These cupcakes were not up my alley. The chocolate cake was really really good, the vanilla was good but did not blow me away. Most of the cake was either chocolate or vanilla with frosting/topping variations. One thing that was fun was that they put some of the flavor filling in the middle of the cake, for example the salted caramel had some caramel drizzle inside. The cake to frosting ratio was pretty good too. But, unfortunately, the frosting was the whipped kind and not the sugar kind. I really didn't care for the whipped frosting, but if that's your jam then you will probably like the cupcakes. It made the flavors a bit boring, like the chocolate cake with raspberry frosting sounds fantastic but the whipped frosting didn't bring out the fruit enough. I ate the cake but tossed the frosting. So, there's pros and cons. They did not have smalls available, you have to order. Everything was very beautiful, and on the $$$ side. I suggest tasting if you are in the market for a cake or cupcake. read more

I randomly stumbled across Mermaids Bakery when I was visiting Denver yesterday...and TRUST me when I say, I am FLABBERGASTED this bakery has only 4.5 stars on Yelp. It should be a solid 5 across the board (I mean I'd recommend 1000 stars if I could.) I had one of their cookies--their marshmallow and Kellogg cereal cookie--and hands down it was one of the top ten cookies I've ever eaten in my LIFE (and I've eaten a lot of cookies...ha!) And THEN I had their peanut butter and jelly cupcake because I was curious as to whether it could live up to the quality of the cookie, and I was absolutely blown away. Not only was the cupcake DELICIOUS--not too sweet, SUPER flavorful, but it was also incredibly tender and moist. It's rare, IMO, for a bakery to do BOTH cookies and cupcakes equally well and Mermaids nailed it. I am DEEPLY saddened I live in Austin and cannot visit this bakery every day and send ALL my friends to eat there too, but I will absolutely tell anyone who goes to the Denver area that Mermaids Bakery, near 16 St. Mall, is a MUST stop for any dessert lover. Horrible customer service! Do not waste your time or money here! I tried to get 6 cupcakes delivered within .5 mile of the shop. On the bakery's website it specifically says will do deliveries for orders over $30. When I called the bakery refused to honor this and said they will only deliver a minimum of a dozen cupcakes ($50) and charge a $10 delivery fee. They suggested I use grub hub. I placed an order with grub hub which was canceled because the hours the bakery listed with the delivery service were wrong (said they were closed). This was true for all delivery companies. When I called the bakery and explained this, they still refused to deliver anything less than 12 cupcakes even after I offered to pay a delivery fee. I am out of state and was over a barrel with time so I agreed to buy 12 cupcakes, when I asked if they could give any kind of discount for the hassle the bakery yelled at me and threatened to refuse the order. This was after I explained to them it was a birthday gift for a friend I was supposed to visit but I had ended up in the hospital and couldn't travel. I also got a call from Grub Hin detailing how they had called the Bakery multiple times to figure out the order but no one answered. Go some place where the business actually cares about their customers. Nothing is sweet enough to wash away the bitter taste of this bad of customer service. read more

This review is only for the gluten free cupcakes. My office had cupcakes catered for some birthday parties. They ordered gluten free cupcakes especially for me - how considerate is that!? They were really delicious. I ate one, and then had to have another. I don't even know what kind it was, because it had a basic vanilla bottom with white vanilla frosting. It did have some chocolate chips on top AND on bottom, which was a pleasant surprise when I got there. The kicker was that the cupcake wasn't super dense and cardboardy like a lot of gluten free baked goods are due to the gluten free flour. Is cardboardy a word? If not, it should be. Sweet dreams are made from sticky, marshmallow, sugary cookies. I've seen them at the highlands farmers several times and decided to give them a try. I grabbed a marshmallow cornflake cookie pack and it was divine! It tastes like you're eating the milk from the bottom of a cereal bowl. It's chewy yet crunchy.
