Because it's so crisp and delicious. I have a little inside information for you. They make their dough on location. All of their vegetables are hand chopped, their salad dressings and pizza dressings are homemade. Even their macaroni salad is yummy and made on location. The first time I ordered fish and chips, it was handed to me in a pizza box and I thought they had made a mistake but it's because the fish is so big and so flaky and so tasty that it needs to sit in a large box.
