This stall in Borough Market specialises in all manner of smoked seafood
They own their own smokehouse in the west of Ireland. They smoke salmon, sea trout, eel and Donegal mackerel over oak in Caherciveen in County Kerry. I was lucky enough to get some smoked eel this weekend, which isn't always available. It's going into my lunch over the next days together with beetroot, salad and horseradish cream
