This is my favorite coffee shop in Ashland. Every time I'm in town for the Shakespeare Festival I come here every day. Fantastic coffee, delicious pastries, and a comfortable space for hanging out. The service here is great and I had a really lovely conversation with the barista who made my drink. I love that they have a few options for brewing methods. I use a chemex at home, which is great, but they also use a Siphon method here. This is the only coffee shop I've been to that does this. It creates a beautifully, smooth cup of coffee through an individual percolator cup. It was really fun to watch them make it. It's quite hot, so you do need to let it cool down before drinking it. For pastries, today I got their gluten free blueberry muffin, a blackberry scone and a chocolate croissant. The gluten free muffin was among the best I've had. The blackberry scone was an absolutely standout and lived up to the hype of other reviews. The chocolate croissant had a great texture and wasn't too sweet! I love Noble Coffee! read more

Yum!!! Awesome selection of pastries and beverages. Ordered cheddar chive scone and mocha with 2% milk. Loved the mocha! Passing through Ashland on a road trip up north, my husband and I stopped at Noble Coffee for our morning caffeine fix and a little bite to eat. The shop itself is very clean and modern, with plenty of spacious seating, both indoors and outdoors. My husband ordered a Gibraltar, which was explained to us as a mini espresso and milk drink. He thoroughly enjoyed it and we were both impressed by the latte art. I ordered an iced oat milk latte with their house-made caramel. My latte was creamy and delicious while being the perfect level of sweetness. For a bite to eat, we shared a ham and Swiss croissant and a cheddar cheese scone. Five stars! This morning we woke up in Ashland after a white knuckle drive through the stormy Siskiyou pass last night. I opened Yelp and saw Noble Coffee and am so glad I did. I ordered a mocha which was a chocolaty, creamy, smooth revelation. Maybe the best I've had all year and it's November! My wife J loved her Latte nearly as much. The barista was kind and welcoming taking time to answer our questions (What is a Gibraltar? And a brew bar pour? After which we ordered our basic stand-bys of course). Great mix of locals, some students studying, and drive throughs like us. Noble Coffee is short distance removed from Ashland's tourist driven theater district and thus has a more "local" vibe. The coffee prices are a bit on the high side but not outrageous. I forgot all about that once I tasted my mocha! read more

This coffee shop may be a bit more pricey than other coffee shops but I just noticed that they use high quality milk (alexandre) and for me that is worth the extra money. The espresso is also top notch. The space is very large and never worry bout finding a table. They even have spots to sit outside. read more

We were so glad to be in Ashland for the last two days as they gave us two opportunities to come to Noble coffee in the morning. And all of our travels, this is our very favorite coffeehouse. We love that sometimes you can catch them roasting. All of the baristas that we've talked to have been very friendly and helpful. We try a total of four pour overs and one mocha in the last two days. Though we don't always like ever coffee, we do enjoy trying it and it's always a very clean cup of coffee. The beans are well roasted! The mocha was delicious! We got a scone this time and it was pretty good. We'll have to try some of the other pastries as I believe they are all made in house. It's a warm and cozy place to hang out. read more

The coffee is delicious and the pastries are drool-worthy. We got the spinach pastry and a ham and swiss croissant, both of which were flaky, buttery and divine. The vibe was relaxed. Multiple patrons were outside reading books and enjoying the cool morning air with their coffee. The service was fantastic too. We got our drinks quickly and the staff were very welcoming. After chatting with a friend I wanted to give Noble another go with a different beverage choice. I purchased a cappuccino and unfortunately, the experience was about the same. The acidic sharp twang pulled through the milk of the cappuccino and instead of tasting smooth drink with two components blending together it felt separated and distinguishable. It was certainly more drinkable than the espresso straight but not something I would get again. The energy of the room is a mix between hustle and bustle and working energy with lots of people getting work done but a fair turn over of customers. One personal thing is I find the chairs fairly uncomfortable but that may just be a me thing. Service is kind and great, full props to them! read more

After a 4 year absence and thanks to COVID and other life happenings, Gayle and I returned to Ashland earlier this week. In addition to attending world class plays, we love to walk around town. One of our strolls returned us to Noble, where enjoyed a mid-afternoon outside table, with a black coffee for me and a latte for Gayle. The neighborhood is largely the same, save for a closed art gallery and another nearby restaurant that didn't make it. We didn't stay at the nearby Peerless this time around, but this Railroad District local remains one of our favorites, of which Noble remains very much a part. I pointed out to Gayle that I was here when Noble first opened and that draft beer was served at that time. They also had a coffee window downtown, that is now a burrito business. Other than that, the interior space, outdoor seating, quality offerings, and good service at Nobel remains the same. read more

Noble has the best coffee in town! If you want strong coffee that actually tastes like coffee, then Noble is for you! Their coffee beans are hands down some of the best around! The coffee shop itself has amazing ambiance! It's usually pretty busy with people working on laptops, casual coffee dates, and people enjoying their coffee while reading the morning paper. As for working here, the wifi is strong and there is plenty of seating. However, Noble can get very loud so it can be hard to concentrate. Definitely more of a social coffee shop than a working spot. After arriving, I came here to get some coffee beans. Friendly staff when I walked in, and they were able to grind them for me. I made it a point to return to soak in the vibe. Lots of locals and some tourists. Lots of places to sit inside and some outside. I had just finished my Mt. Kilimanjaro walk and needed caffeine and food. I ordered a cappuccino and the ham and cheese croissant. He: Which roast would you like? Me: Huh? I've never been asked this question and I just told him to pick one for me. I think it was a dark roast because it had that deep smokey flavor...soooo good! I would've liked the croissant toasted, but I think I could've asked them to do it, but it was still good! Seems like they have amazing barista artists because every picture has amazing foam art! I couldn't resist taking a pic myself. The coffee here is delicious looking and tasting. I like to test a new place with the vanilla latte as a base. It wasn't too sweet or overtaken with vanilla flavor. The coffee was smooth and overall it was just well done. We also got one of their surprise pastry boxes which was a great idea - same price as same day pastry, but you get more and it's a surprise! The inside is sparsely decorated and I enjoyed looking at the variety of older coffee pots along the wall. We didn't stay as we had to get on the road but there only seemed to be 4 chairs that looked particularly comfortable or inviting (i.e. padded), all the rest were wood or wood/metal stools. As a person that has back issues, that was disappointing. I would not be encouraged to stay very long had we sat down, but maybe that's what they're going for haha. read more

Came here on a recent trip with family. I had never stopped by and was curious about their press coffee. I was im-pressed (sorry) and aside from feeling the effects of over-caffeination from my moka java (yes, I'm a lightweight) I had no regrets. They offered a gluten-free (if not dairy-free) pumpkin scone for those noble among us watching their gluten intake, and the chocolate croissant was good (by American standards). I got their coffee fruit tonic too, which was pretty good as a kombucha/soda alternative. Otherwise, family members liked their Americano and latte. Service was friendly, if not fast (perhaps it was the Saturday rush hour), and I appreciated they had a carrot bran muffin on offer. We stopped into Noble Roasting on our way back home from a lovely week in Ashland. The place was clean and spacious, with beautiful artwork. Our drinks were perfect and quickly ready. So already a great experience. What really pushed it over the top was that they have windows into the roasting area. Our kid was fascinated and had all sorts of questions. The person roasting noticed him and waved us in and chatted about the process, and where the beans come from, and how the machine worked. They shared that one of the packages of recently roasted beans was going to be sent to the bakery down the street from our house in Eugene! It was a really sweet experience, and that kindness and connection will be remembered. Thanks for a great experience Noble, and we'll be back any time we are in Ashland!!! read more

We were driving passing by this town and decided to make a coffee stop. So glad we found this place. We found parking in the front. There was seating outside. The place is beautiful inside. It's very big inside and tons of seating. They had hazelnut option and a lot of different milk options. I ordered an iced hazelnut ice coffee. They have extra sweetener on the side. I did add half a pump of sweetener. The coffee is very good here. Definitely recommend trying this place. read more
