After seeing the rude yelp replies from the owner, I figured I'd give this place a try to see what the fuss was all about. Overall review: mediocre at best. For it being in the bethel/Danbury area, it's better than all of the other pizza options around. That just means that with an incredibly low bar, this pizzas pretty okay. I got a Margherita pizza and the crust was Burnt to a crisp in some places. The crust was so thin and floppy I almost had to eat it with a fork and knife (which is like a sin to me) and generally there wasn't much flavor. The sauce was good, but besides that I really don't see the hype. I guess they lucked out and realized there's a severe lack of good pizza in the area an capitalized off their mediocre at best pizza making skills. Especially after seeing the owner's disrespectful and unprofessional yelp comments, I won't return and I won't recommend. read more

So I am on a business trip and I just want a good pizza. I'm STARVING after most of the day in airports. I ordered a simple pizza: cheese with tomato slices and garlic. What I got was so unsatisfying. The crust was nearly not-there, way too thin even for a low number of toppings. If I had not been so hungry I might have sent this one back--something I never do. So I'm giving these guys two stars because the ingredients were fresh and the quality was good, since I ate most of it with a fork off the box. But the overall pizza? Not a pie. read more

Ever since my wife developed a very bad gluten allergy a few years ago..pizza was a luxury she thought she'd never enjoy again..We've tried a lot of restaurant GF pizzas out there with terrible crusts, sometimes she's described them as "saltine cracker" consistency. Notch8's is phenomenal. Not just for someone that is GF..it's delicious for the rest of us. I appreciate them so much for putting the time into making that crust taste amazing and not just phoning it in like most places. The best part is we can share a pizza and both get to enjoy it, that's what it's all about. And that's coming from a Bronx boy!! Thanks guys..good work. read more

Had a great evening out with friends. Unfortunately it rained so we could not sit outside at the amazing outside patio and bar. Food and service were top Notch. Three of were in the area and went for lunch solely based on the reviews. We loved everything - Turkey burger, honey hot chicken, and a quinoa bowl! I especially enjoyed the French fries - crispy outside and soft warm inside! Seems like a great atmosphere and a fun place to visit at night. Next time we will have to try the pizza. read more

Our office ordered take out and everything was very good. We were a bit sad that pizza cooled down so fast as we are only ten minutes from the location but we popped into toaster oven and it was great. We ordered the pizza with tomatoes and basil, tomato mozz melt that came with fries, boneless hot wings and French onion soup. The melt was huge and even had fresh pesto which made it very good. The French onion soup tasted very good very rich broth. The hot wings weren't hot until you finished eating and then they made back of your neck sweat. All in all we will be back - wish the pizza oven could travel read more

Wanted to give a huge shoutout to Notch8 Restaurant & Bar especially Josh, the manager who took my call and made the magic happen, Trevor, our amazingly patient and cool server, and Tony Heslin, for accommodating 27 of us on less than a half hour's notice. We didn't know we'd win, and we didn't know we were going to have a team dinner until late yesterday! We tried to get a spot at chain restaurants that had more space and felt could accommodate that many at the drop of a hat. We were pleasantly surprised that our hometown small business could accommodate us; as bringing the business to our town was just as important as our boys bringing the U13 Boys Southwestern District Championship trophy home. Brewhouse Burger was great. The pretzel bun was perfect for it. Thick and slightly spicy fries were good too. The hot chicken handheld was okay. It is not the best we've had of the sort and it felt like something in its overall mix wasn't cohesive. Decent but not great. Very cool, clean, modern ambiance. I stopped in recently on a Saturday night. Lively place - seemed like a good mixed crowd. (I had been told there were lots of 21-24 yr olds - but not true!) I think there was a great balance. The magic of the place from what I saw is probably most wise owner's goal: make a place welcoming for everyone. They had a live band and they were terrific - lots of energy in the place. I was here a bit late and only had drinks which were the going rate. The issue for me was I had already eaten a good meal elsewhere - or I would have chowed here. But the pizzas, nachos, wings and other items pouring out of the kitchen looked awesome and by the temperament of the diners they clearly were big fans. From what I saw, I definitely want to go back there and try them out. (I sampled a small amount of nachos and 1 wing from a friend - all great.) The reason I decided to pop in was because I was alerted to the owner's responses to negative reviews. My daughter showed me a few and frankly, I laughed so hard at some of them I almost fell off my chair. I had to see what this place was all about. I completely sympathize and admire that this man (Tony?) fights back in defending his business. Leaving a negative review is the same as being a rat, and that's a lesson that needs to be restored at home and in our schools. No one likes a rat. Give me a month or so - I will stop by to eat. WOW! You CANNOT call in a large order w/confidence b/c the background noise is overwhelming. I placed an extremely careful online order and even tipped $20 despite the fact we picked it up... a side of chicken cutlet was absent. 1 pizza wasn't the one we ordered AND then..(& this was a shock): the BASE price for a "build your own calzone" was $18. Fine...but THAT must've been for just the dough!! The mushrooms/mozzarella/broccoli/& a vegan meatball I requested to be IN my TWO calzones brought the charge PER CALZONE to TWENTY SEVEN DOLLARS!!! Yes: that's $54.00 alone for TWO CALZONES!!!!! There are up-charges galore & I didn't see the extra ricotta I paid for on two of our pizzas-I sure did PAY the added $4.00 for it, though... Service is terrible... food is not appetizing . I would not recommend this business. Prices are high too. As I sit here, I have read the many reviews for this place good and bad, and find it very disturbing that the owner does not take constructive criticism very well. Instead, if you write a review where he can learn from it, he would rather mock and bully customers. Shame on you.... You do NOT know me at all!!! And yes, the service was terrible. My husband and I moved to the area during COVID and have been on the quest of a to go spot with a laid back vibe and good food. If they have pizza, beer and wings bonus points. We've been eyeing Notch 8 for a while. Tonight we took the plunge and meandered over. I am happy to report this was a wise decision. We ate out on the patio which was lovely and well lit, it's Sunday at 7pm so there wasn't a huge crowd but the bar looked to be well occupied. We ordered wings which came out crispy and piping hot and were very good. Out drinks arrived at the same time. I had the LL mule J. It was good but I'm not a strong drinker so I wish I went with a cider. Our main course was Olive you (pizza) which is a perfect balance of salty, sweet and creamy it reminded me of a calzone. My husband who never eats his crusts (my gain) devoured it and even ate the crust. The is place is solid and I'm happy that we have finally found a place that we can both enjoy! However, this review went up about a 1000x notches after I read the reviews on Yelp. I like to see what people recommend when I am at a place and I'll check out the "bad" reviews to get an overall perception of places. When I did this I fell even more in love with this place. You see, Tony was not there to give a high five to but if he was he would have gotten an epic elbow bump (COVID people). His responses to the bad reviews were legendary and amazing. I appreciated his authentic disappointment and passion for his restaurant. I'm a veterinarian and people love to leave their one sided BS warped persceptions and we are held hostage to the Yelp reviews. I cannot applaud this owner enough for standing up to those who like to hide behind a computer screen with their complaints vs. making a phone call to remedy the situation. Tony one day we will meet and I look forward to that day! Keep up your amazing hard work and your delicious food. We appreciate you! read more

Okay my wife and I have frequented Notch 8 during off peak weekday hours on multiple occasions and always received good service at the outside patio. Lately while the food has remained consistent the service at the patio was virtually non existent during our last visit. Perhaps they should have closed the patio if they were under staffed but this was the worst. Other customers sat at the patio bar only having to go inside to order and fetch their own drinks. Other customers had to go inside just to settle their bills. Perhaps is was a bad day but from my perspective it was a VERY BAD DAY read more

I was recently at Notch 8 with my family and we enjoyed the food and service was great. Had delicious Buffalo chicken dip for appetizer which is delicious not crazy spicy just right, also love the garlic knots with 3 different dipping sauces. Cocktails were yummy too! Notch 8 has world class dining. James Bernier is an amazing chef. I ordered blackened cod today which was on the specials list. Fresh, delicious and exquisitely presented. I literally ate bite by bite. What an eating adventure. I told the server that he is Chef Ramsey level. I usually order the veggie pizzaa which is always delicious...so happy I got the cod. We have ordered pizza to go and eaten at Notch 8 since they opened. We are avid fans of Note, too. But tonight we ordered a pizza that was charred, and lacking in taste. We understand that expenses are up everywhere, but when 1 pizza cost $30.00 and is sparse in some of the toppings, that's unexceptable. We may or may not give them another chance. Need to think about that. 850 in Ridgefield may be calling us to come back. Hopefully this was a fluke. read more

A big "no thanks" for me. Did you see the unprofessional response from the owner on the other review? I was going to give it another try but after that, he's lost a customer for life. I'll be sure to spread the word about the rude responseb too. This place it's a cheaper version of the Note, which is also not fantastic. Slow service, trying to hard, over seasoned food with messy presentation. We went to Notch8 for the first time tonight. We were so happy with our meal, drinks were Amazing and service was superb!! Hubby had a burger which he said was delish. A burger may seem ordinary but honestly, its hard to find a good burger. Hubby was really pleased. I had the special which was swordfish BLT. Amazing!!! I ate everything!! EDIT: Shortly after my review I received a great message from Tony. It started with: "Hey Marcus, we had a an employee pool on how long it would be before we received our first douchey YELP review. Thanks for your comments tonight because I picked night five Winner Winner, Chicken Dinner! I hope I double up my luck on tonight's Super Bowl pool because maybe I will win enough dough to retire from this exhausting restaurant business. " ... Yikes. I'm giving one star for food and one star for service. Let's start with the service. We arrived around 625pm, they were seating tables regularly, with about 30-45 minute wait. I get it, new restaurant, hefty wait times, no problem. We get seated around 710pm and that's where everything fell apart. Some lady stopped by within a few minutes and gave us silverware and a napkin, so we figured we'd be ready to put in a drink order or appetizers pretty quick. We didn't even get a menu until 730pm, even with at least 4 wait staff just walking around. We got our menus (from someone who turned out never to be our waiter), and we knew we wanted. 5 minutes later we're asked by another member of wait staff if anybody has helped us yet, this man also turns out not to be our waiter. Finally we get a waiter, order our drinks and food, only took 40 minutes, we may as well have just kept waiting by the entrance. Next, the food. Basic and trying too hard to sell this hot honey craze. We got the wood fired meatballs to start, they were ok, very pale and overcooked in the middle, but a nice exterior. Our entrees come shorty after. We got the hot honey chicken sandwich and the mac and cheese. The mac and cheese made up for the lack of service, but the sandwich was a major disappointment. Thinly pound chicken to prevent it from being undercooked, turns into them overcooking it! The bun was burnt, the honey was missing the "hot", we should have just gone to Chick-fil-a for a chicken sandwich instead. Maybe we'll order some pizza to take home next time. I'd expect the owners of Note to pull off something great here, but it fell flat. read more

Had a great time on opening night. Service was friendly and was able to answer our questions regarding the menu. Beer list is varied and the mixed drinks were very tasty. Menu is varied with a lot of variations on good ol' bar food. Atmosphere is somewhere between comfy and trendy. Another nice addition to Bethel bar and restaurant scene! read more

Had a great experience!! Outdoor patio was open which was comforting. Arrived with a group of 5 adults and 2 kids around 4:45pm on a Saturday and was 1 of about 3 tables. Everything outside filled up pretty quickly after that! Service was great, even though some new servers were being trained, they were personable and did a great job. Josh was particularly attentive! Food was awesome! We had only gotten takeout previously, but happy report the food lived up to our expectations. My only minor critique, was the Crispy Chicken Bahn Mi. Good sandwich, but could have definitely used some leafy cilantro to brighten it up a bit. Overall a really good experience, we'll be back! read more

Food is good but wayyyyy too pricey for what it is. Ive had the honey hot chicken many times there, and I'd say a good 40% of the time it comes out way undercooked. Like, pink. I've asked them before to "make sure to overcook it" but I still got one that was not safe to eat. read more

History

Established in 2020.

We opened in Feb 2020. We're putting out a great product in a cool downtown environment. We hope to be open a very long time. Unfortunately, Yelp isn't helping. We've earned dozens of great 4 and 5-star reviews but they are not being counted towards our rating. We think it's because we refuse to advertise with Yelp. Take a look at our "below the line" reviews and let us know what you think. Regardless, we won't stop delivering great food and drink and we won't quit until YELP hides all our reviews (but they will never get our $$).

I love the restaurant business. Unfortunately we need to deal with online companies like Yelp who extort small businesses. I refuse to advertise with them so they hide all our good reviews. Take my word for it, the food at Notch8 is great. The atmosphere is even better! I asked the working manager if he could waive the fee since we all had ordered drinks and some people at the table had ordered some entrees. He told me he was not at liberty to make that decision. He said that the owners' reasoning was that if cake was brought in no one would order dessert off the menu. Who orders individual desserts for a birthday celebration??? Long story short, we did not sing happy birthday, and the birthday girl took her cake home uneaten to celebrate with her own family. I will never go to this place again, especially for a birthday celebration. If they want people to come back or recommend their place, they should be more accommodating. I have never heard of this ridiculous policy at any other restaurant. And by the way, they were a lot of empty tables there tonight- it's not like they had a ton of paying customers waiting to get seated.

Friendly, attentive, and genuinely enthusiastic -- exactly the kind of crew you want guiding you through 70+ wing sauces like a sommelier of poultry. Now... the wings. The chicken itself was excellent quality and cooked perfectly. Crispy skin, juicy meat, great size -- everything you want when the wings arrive. When we saw the massive sauce selection, we were ready for wing nirvana. But this is where the prophecy of Yelp reviews past came true. The sauces were delicious in flavor... but thin in viscosity. Instead of lovingly clinging to the wings like a good sauce should, many of them staged a dramatic escape and formed a puddle at the bottom of the platter. The focus of our visit for me was wings, but I also tried some tasty cheese topped chili with chips. And my son's steak fries. They were gigantic! As for the wings, the chicken was high quality and had good texture. The blue cheese was above average, and there lots of pieces of celery and carrots. Most of my comments are about the sauce. I tried 3 sauces. The Hot Buffalo Sauce, which I understand is a CT favorite, was good, but it didn't really stick to the wing. Some of the sauce may have been absorbed in to the skin of the wing, but it wasn't that noticeable flavor-wise. There was a small pool of sauce at the Bottom of the basket rather than on the wings. I suspect the wings weren't adequately tossed in the sauce. Or maybe it was a thin batch of sauce and didn't stick for that reason. In any event, the sauce situation was not ideal for the Buffalo wings. My favorite sauce was the Fire & Ice, which consisted of TK's hot sauce, Ranch and Horseradish. This sauce stuck better to the wings. It had a nice rounded flavor. Mild heat, A bit of tang. A very good sauce. My third sauce was the Dragon. This sauce also stuck to the wing well. It consisted of Honeyaki, Ginger, Suicide sauce and seasoned seeds. The sauce was pretty good, but it didn't taste like I expected given the menu description. I didn't pick up any Ginger, which was what I found intriguing about the description. The sports bar/restaurant itself was cool. There were plenty of big TV's. And smaller TV's at the tables along the outside. Service was very good and friendly. I'd definitely check out TK's again. Next time, I'd probably try to visit at a later time when there were a few more customers there because I wonder if some of the sauce issues were related to it being an off peak time. 4.25 Stars

Team members were overheard complaining that bussers were sent home and that left them to clear tables. This used to be the restaurant I recommended, for its service, the quality of the food and the kindness of the team. Hope they correct whatever issues have come up.

We started with the loaded tots, which were crispy, cheesy, and perfectly indulgent--a great way to kick off our meal. For my entree, I had the chicken tenders, and they were some of the best I've had--juicy, flavorful, and cooked to perfection. Chicken and Waffles!!! I've been searching for FOREVER for a place that serves really good chicken and waffles and Notch8 is that place. Came here for brunch with a friend and obviously ordered the chicken and waffles which came with a cayenne maple syrup. I asked for that on side with regular maple syrup as well in case the cayenne was too spicy. I liked the cayenne but I think it would've been too much if all of my chicken and waffles were covered with it. I'm there every Friday night and sometimes Saturday nights. Honestly I cannot find anything wrong to say about Notch8. I always sit at the bar, Frank and Kevin are attentive and personable and know their shit. The standard menu is full of choices for just about anyone and there isn't anything I tried that I didn't like. The pizza menu is fantastic with my personal favorite being the green monster. The specials menu is innovative and unique with outside the box thinking. I came into Bethel to visit family. My sister, brother in law and nephew met me, my son and my mom at Notch8. Fun relaxed atmosphere. Excellent beer selection. Great food choices. Servers were friendly and attentive. We had pizzas and "Holycalzony" Combo of pizza, calzone and garlic knots. Wow! Awesome!
