I've participated in the Goetta Fest put on by another producer. I love this stuff. Is it super healthy?? No. Is it delicious gift from heaven? Why, YES. So any time I come up to the area I try somewhere that makes goetta. This was a nice neighborhood meat market that makes their own so i had to try it. It was pretty good. They do make it WITHOUT MSG, so if that stuff gives you a headache or if you have to watch your salt intake, they have an option for you! I bought a goetta, egg, and cheese sandwich and it was tasty. If I was nearby, I'd try it again. I also took a few pounds home and cooked it over the next week. Now, back to my search for goetta and on to the next butcher shop! ;)

I was afraid of the possible heat due to the peppers, but it was just enough to many you want and be able to eat more. Greens? I was leery when I was told there is vinegar in them. SOLD!! They were fantastic. Tavis makes a homemade goetta that would make my German ancestors proud. We then learned that Saturday is breakfast all day. He had us at biscuits and gravy. (You can get lunch and dinner items as well, but WHY?). We came back the next morning and split an order that was just enough for two. When you go, make sure to tell Tavis you will pay for the water, but you hear the food is free!!

That being said, once you learn how to navigate around this unfamiliar and I should mention large chunk of meat and bone, the more your going to love it. There are ways to remove the salt. It will be saltier but that's part of the taste you will learn to enjoy. It's the seasoning you never knew you needed in Ham and Bean soup, Ham and Egg Omelets, Eggs Benedict and many other dishes. There is enough ham to last for quite a while once it's boiled or baked. I like boiling best for long cured ham. It removes more salt. Once done, it's cut into slices or chunks for sandwiches, soups and other dishes and frozen in portions to get out of our freezer any time we want. One of my favorites ways to eat it is to bake some slices in a water and brown sugar sauce. It compliments the saltiness of the ham. Ham candy! I went to visit my cousin who lives near Crescent Springs Kentucky. I got my last cured ham from Blue Grass Quality Meats in Crescent Springs Kentucky. Believe me, I will be back again. First off, you step in the door marked "store" and get smacked in the face with the smell. Its BAD. I know this is buying direct from the farm so I looked past it in the hopes to get some great fresh meat. I asked for bone-in chix breasts. Guy went into fridge and came out with a pre-portioned bag of boneless/skinless and tells me they are all out of bone-in. I figure it's not as good, but some whole chix breasts can still go on the smoker ok. Today I opened the bag to start prepping and putting on some dry rubs to find it was a bag of chix breast scraps/cutlets. Thin measly pieces you would use in a stew or something. Not a whole in-tact breast in the entire bag. The pieces were all horribly butchered, too. So I got ripped off of $20 for a bag of chix meat that should have been chopped smaller or ground up. I will not be going back, even for a Thanksgiving turkey like I was considering prior to visiting. I would not recommend it to anyone else, either. If you do, I recommend bringing some wet-naps/ diaper wipes/hand sanitizer. I couldn't wait to get home and wash my hands after being in there. Eww.

I ordered a Goetta egg and cheese sandwich. It was only like $6.00. Took about 5 minutes to make. I ate it right there on the counter in the shop. How was it? BOMB! This sandwich was great! Nice soft, yet sturdy bun, a fried egg, slice of cheese, and a nice square patty of Goetta. It was piping hot, and I enjoyed every bite. The Goetta was meaty, crumbly, and had a great flavor and texture! If I was not eating elsewhere in the market, I could have easily put down another sandwich, or two! One of the best breakfast sandwiches I can recall ever having! Will definitely come back if I am ever near Cincinnati again.
