I went to the internet for the best Florentine steak and Trattoria Mario consistently popped up as highly rated. I reached out to the restaurant via email to make a reservation for a Friday. I wanted to get the earliest reservation possible, so the restaurant reserved me for 7:30pm, which was when they open. I was advised to show up on time - even a 2 minute delay would make me miss my reservation. I can see why Trattoria Mario was strict on reservations. They open on the dot, and then a staff member calls out each reservation at 7:30pm like a roll call. Seemed to me that if you don't have a reservation then you're out of luck, because there was no waitlist and the restaurant small and space was limited. Service was great. Our waitress was highly attentive and got us in/out of the restaurant quickly, which was what we were going for. Food came out in a timely manner. We ordered the penne al ragu, salad misto, and a Florentine steak to share. The penne was perfectly al dente, and I liked the meat sauce. I did find the pasta sauce salty, but it could've came from the grated parmesan. The saltiness was not a fluke. The Florentine steak was just pure beef and a ton of salt... too much salt for my liking. I also decided that I'm not a fan of Florentine steak in general.

The service was poor, we were told by three waiters it was their first day, and that the head maître d' was sick (not information that should be share with guests, but I am not a local). The service was extremely slow, not up to the standards of a restaurant like this. Our food came out between 30 minutes and an hour and a half after ordering. That is one meal came out after 30 minutes and one meal came 90 minutes after it was ordered. We were told that since we did not have reservations, we should expect such a service, premium service (all food arriving at the same time) is exclusive to people with reservations, however, we did notice guests that had reservations getting their own utensils and menus an a bit annoyed. Some of the food was very good, unfortunately, not all. One dish was described as Wildboar. It tasted, to us like beef, poor quality beef at that (good enough for Americans). The staff insisted that the meat was high quality wild-boar and we were not sophisticated enough to know the difference. (We are sure it was not boar) Please try it, I assume they're service is going to be much better than the night we dined, it was a pretty epic failure on the wait staff and kitchen. Everything was so delicious that we ate here twice in a row. In fact, my husband also had the lamb shank twice in a row because of how amazing it was. Each meal starts off with a complimentary basket of bread and butter and some crackers and dip. The meal also ends with a complimentary platter of mini desserts. I tried the pappardelle with wild boar ragu and seared steak with arugula, parmesan and potatoes. Both of these dishes were absolutely standout -- especially the steak which was perfectly rare and juicy. The menu doesn't have too much pasta and mainly features various selections of meat and seafood. Despite this being a gourmet, michelin star (all the things) the portions are quite large. The prices are definitely a little bit high, but the quality of food and convenience really can't be beat. If you are staying at the hotel I strongly suggest making a reservation.
