Upon walking in, we were given samples of all of the meats and cheeses in the shop that day so we knew exactly what to order. He explained what they were, how they were aged (if they were), and where they were from. It was a really amazing experience and was really fun to learn about the various cheeses, meats and breads. Some of the ingredients are sourced locally from Tuscany and Pisa. I don't understand how there are reviews dating from the Spring of 2020 because that was during the horrible Covid-19 outbreak that afflicted Italy and which was documented on some heartbreaking documentaries. This is review is from my experiences pre-pandemic. I found it on my laptop did some editing. I don't know if anything has changed since I visited. OK. I'm going to be contrarian. Not because I like to be but because I have to tell the truth. This place is wildly overrated and the experience is pretty bad. So we read all the reviews on TripAdvisor and even saw some prominent YouTube personalities praising this place. Their videos don't show the reality of the experience. Pro-tip: Prominent YouTuber's like food critics that don't hide their identity get VIP treatment some poor tourist like me don't get. First, the location. Amazing, next to the Duomo. We were hungry after we got to Florence after leaving Rome. We headed to this place after we checked into the hotel. We walked and was surprised how close it is to the Duomo. There's a line. Luckily, it's sunny but not hot or humid. The store is smaller than you'd imagine. A very narrow store with a counter on one side of the narrow store. The customers line up, go through the door along the left side of the store. There's two posts with a rope in between. So this basically creates a "U" in this store. You go through the left side of the rope until you reach the dead end of the room. You hear a presentation and try some cheese and meats choices for your panini, then you go around the end of the rope/post, round it to the right side of the room and order your sandwich and toppings. At the end, you're near the entrance door again, you receive your panini, pay, and triumphantly look at the people who are just entering the narrow store. You're strutting out in glory and bask in the shadow of the Duomo. Yeah. First, we were lucky it was sunny but cool and less busy in Florence, not during peak tourist season. I can't imagine going through this annoying process in the summer heat, in peak tourist season, with throngs of Yelp-reading, TripAdvisor-following tourists waiting in line with you. While in the store, you are packed in there with other sweaty tourists in like those non-FastPass lines at Disneyland, waiting for and trying your samples like in some crazy Costco sampler line and then finally getting your sandwich and breathing some fresh air outside. I can't imagine how things are different now during Covid. Maybe they don't pack people into a narrow cluttered store these days. I hope not. Secondly, the panini. Mine was bland and cold by the time I got it. Totally disappointing. No one in my family was thrilled or impressed with any of the paninis we bought. The next day, wandering around Florence, we came upon another sandwich shop. It was way less busy because the lack of hype. The owner let us try samples, just like at Panini Toscanini, but at our leisure (Geez! You mean Panini Toscani isn't the only panini store that gives you samples in Florence???) and then made some really good fresh paninis and sandwiches for us. read more

I love the way they function & also their food obviously. The place is a small shop, so when you walk in you head to back, which is the start of the line. The guy explained that he would be giving us samples of the 3 meats and 4 cheeses, and then we could choose which ones we wants on our panini. He starts by explaining the # of days each cheese has been aged and the type of cheese. Then onto the 3 meats. Then you can choose which bread you'd like. I ended up choosing the 3rd cheese cause it was soft, yet aged the 2nd to the most. I chose the salami Florentine for the meat, as it had fennel seeds infused into it. For bread, I chose the foccasia. Then comes the toppings. I chose the spicy spread, arugula, sun-dried tomatoes, & the pickled veggies. Finally, it's toasted. Worth the 6 euros. read more

Highly recommend this place for lunch! We ate here after we did the Duomo. When you walk in someone will greet you and let you sample a few cheeses and meats. You will then build your own panini by choosing from a bunch of different kinds of bread, meat, cheese and toppings all for 6€. They also have beer and wine for sale. This place is just fantastic! Right outside the Duomo, you can get your panini and sit outside and people watch. You walk inside the gentleman behind the counter(who is also incredibly friendly and cute, just saying), explains to you the process in English and Italian. You then get to try 4 kinds of cheese, and 4 kinds of meat(which I did not try as I have recently become a pescatarian). From the lady who sat next to us she said the quality of the meat was some of the best she had! I'll take her word for it. After a busy morning checking out the sites in Florence we were starving! After a quick gps search for restaurants, we found this little gem. Oh my is it a gem. We waited outside the small shop against the wall. This was instructed to us by a gentleman that looks like he could pass as a bouncer for a club-super friendly guy. He will carefully allow approximately 6 people into the shop once enough people have departed. The Shop is small and there is only a table or two to sit so be prepared to take your food outside to enjoy. Inside, there kitchen staff allow you to sample approximately 4 types or bread, several types of meat and cheeses so that you can customize your panini to your liking. Be careful not to chose each item that you like the most as sometimes the flavours can be too overwhelming. For instance, if your meat selection is a bit salty then don't pick a salty cheese-the whole panini will be too salty. You can also choose up to three toppings and make it a combo as well. Woah. Ok, so since I ate at Panini Toscani, I have legitimately not stopped thinking about it. So obviously I found out about this unassuming sandwich ship on Yelp, like everything else I eat. It was directly across from the Duomo, which made me think it was a tourist trap, but I read review after review of people assuring that was not the case. The wait to get into the shop did take some time as they only allow small groups in at a time. Why? Because the owner takes five minutes with each group to provide education and allow you to sample each cheese and meat to assure you have the sandwich of your dreams. This sandwich was literally the best sandwich of my life, and I'm devastated that I don't even remember what I got on it. I went back the next day to get another and was horrified that it had closed.
