When it comes to cuts of meat, I don't know my sirloin from the blade. The only cut I can confidently identify is the T-bone because of its telltale T shaped bone. Therefore I'm not very discerning when it comes to butchers. Oh I'll got to an Asian butcher for obvious things like char sui, quail or pork belly but for stir fries, fillets and sausages it's Woolworths or Coles.
Recently, I've started visiting Pearce's Quality Meat - at first only because it was next door to my favourite deli. After a few visits, I realised that their prices are way cheaper than shopping at the big supermarkets and the portions are also larger.
I can buy a bag of chicken frames and necks here for around $2. This will make about 10 litres of chicken stock which will last my family about a week. I've also made a few surprising finds such as pig trotters -yum! (I feel I need to emphasise this is a good thing), whole ducks and the ideal sized lamb/ pork roast for two people with leftovers to make lunch for the week.
