Save your fingers and your cooking mojo. Bring your dull ass knives to Budd already! I make dinner almost every night and as a veggie loving vegan, I use my chef's knives constantly. My veggies are typically from the farmer's market so that means a good amount of my prep work is spent slicing, chopping, and dicing. With a dull knife, this is a cumbersome, time consuming task. Yet somehow it's easy to forgot how sharp a knife really should be and remember that it's time to get them sharpened. Somehow our workhorse knife, a Wusthof 8" classic chef's knife, got a bend in the very tip of it and I realized I couldn't use it safely anymore. I had gone back to my trusty Shun Santoku 7" knife but knew it was feeling a bit dull so it felt like it was time to get them sharpened. I had seen Budd at the Hillcrest farmer's market many times before (EDIT: he's there the second Sunday of each month) and finally got it together to bring him my two knives along with a dull paring knife. I explained to Budd the issues with the Wusthof but he was more interested in inspecting the Shun. He told me it was super dull. We discussed good knife technique in order to keep knives sharp as long as possible. I also told him that I use a honing steel but wasn't confident I was using it effectively, even after watching a video on his website (2sharpen.com) that demonstrates the proper technique. Well, that caused Budd to go into his truck and grab a knife with a rolled edge so that he could show me the proper way of using a honing steel right then and there. Talk about fantastic service! There's nothing like learning from a pro. Budd first showed me how to hone the blade and then had me do it on my own. It's clear that Budd loves his craft and feels passionate about sharing his knowledge with others. My knives were ready in about twenty minutes, and the price was very fair. But the true test was when I made dinner tonight. It was a vegan paella with all kinds of veggies that had to be broken down: onion, garlic, bell pepper, tomatoes, romano beans, parsley, portabella mushrooms, and on and on. Normally, it would be a slow and somewhat annoying task, but with my newly sharpened Shun Santoku, it was literally a breeze! It felt like my knife flew through the veggies on their own with almost no pressure or effort on my part. My cried a little inside as my knife glided cleanly through the soft tomato. I can't wait to try out the Wusthof and paring knives next. If you cook, you need to maintain your tools. Get your knives to Budd before you lose a finger or get so cranky while chopping that you just start throwing food around (true story). Sharp knives make life easier and make cooking more fun. I have used them for years but moved a little further away so it had been awhile. Made the mistake of sending a Shun tomato knife back to the factory to make sure the serrations were sharpened to factory standards. My friend sent hers at the same time. So today was the first time we let Bud (of Perfect Edge) sharpen our knives. We had him sharpen (2) of our kitchen chef knives, my discontinued Spyderco Techno 2 EDC (Every Day Carry) pocket knife, and a Colonel Blades EDC folding tactical knife. All 4 knives were worked heavily to a dulled edge, and was in need of a good sharpening. We went to the Hillcrest Street Fair on Sunday, May 19th, and it was raining like crazy. Bud had all four of my knives sharpened better than they were brand new.
