I have a thing for Japanese knives, if you know you know. These knives are by far some of the best in the world and as an aspiring home cook and someone who watches way too much Food Network I know that the most dangerous tool in the kitchen is a dull knife, not a sharp one. Because of this I needed a new sharpening service to get me dialed in for Christmas. That prime rib ain't going to cut itself! Here is the thing, everything that you've read about Tio's is absolutely true. The man is extremely friendly, his work is top-shelf, his prices are beyond reasonable, and he works quickly if you have an appointment. I needed four knives sharpened (all Japanese) and it took about 30 minutes or so, mostly because I was talking his ear off and learning about his business and skillset. Tio took the time to fix the blades on my shears/scissors as I tried to sharpen them myself with a kitchen sharpener. As he suggested, it makes sense: Get knives sharpened as needed versus waiting until your whole set is full (like we did) it's like the knives are new again!
