.. a mixed box set of some of their flavourful offerings.
    John P.

I regret having missed the pleasure of ever stopping into their brewery in Victoria for a tasting. But over the past few years, have thoroughly-enjoyed several of their brews purchased and enjoyed here, and taken away on local trips. For some past stays in Manning Provincial Park, we often took their boxed, mixed bottle products, to set up 'flights'. Setting them up provided a lot of fun, and some tasty enjoyments for happy hours. More recently, it has been purchasing their boxed, mixed canned beer/ale products, and enjoying them here at home. Phillips Brewing is one of Victoria, BC's most highly-rated and regarded craft brewery. And based on my tasting experiences with their products, it sure deserves the rating.

Flight of beers and a snack plate with an extra pretzel

Absolutely loved this place! I'm obsessed with Dinosours so I knew I had to come here when I was in Victoria. We each got a flight, I do wish they had more than 2 sours on tap but I'm sure they switch them out occasionally. The light beers I tried were great too! We shared a snack plate and got an extra pretzel, but we probably would have been fine with just one pretzel as they are massive. They also have a merch store next door, you can make a custom mix pack (15% off) and I also grabbed a dinosaur shirt lol. Will be back!

One of the biggest breweries on island. Tasting room is pretty large with a nice patio. Patio bar serves limited selection but there are 16 beers on tap inside. They also serve gin flights and cocktails. Prices are reasonable. We also got some tortilla chips for free. Staff here were super nice.

I love Philips. The Blue Buck was the first beer I ever purchased myself, and the Electric Unicorn is a beer I still come back to consistently after having tried probably over a hundred craft breweries around the world. When I found myself in Victoria, I knew I had to visit. The customer service is impeccable, and after having tried pretty much their entire tap, I went with some classics and some sours. Deplorably, I hadn't been aware of their sour collection until then, and now I am an avid Dinosour consumer! Try the pretzel with beer cheese sauce, it is divine.

I came here last week before wrapping up my Alaska cruise trip. My sister said this place sells good beers so we went here. I can imagine Homer drooling at Duff Beer or donuts, the first world problem if he wants his beer or donuts. So much variety of flavours here. I can also see how beers are packaged the next door which is cool. There's one funny name of beer especially Gangster's Parroteyes. We did a tasting flight ($9) consisting 4 flavours of beer. Philips know how to make their beers here. I don't really like drinking, but liked Leosaurus out of all of them. Something citrusy refreshing to drink on a scorching summer day. We wanted to bring dad here for beer sampling it didn't work out. Fast friendly service. Great place to chill with friends. I saw Dinosaur soap which smelled heavenly it was tempting. They also sell some cool merch in the store. It's totally worth visiting Philips Brewing.

Five stars all day long. Great atmosphere and wonderful beers all around. We ended up ordering two different flight tasters. Our server/bartender was easy to talk to and very helpful. Probably one of the best merchandise setups I have seen at any brewery. There was a gentleman with long hair at the merchandise counter. He was completely amazing. He ended up having some tin tackers in the back for us. I would consider this one of the hidden GEMs in Victoria. We bought a couple of shirts and stickers. Great beer!! Highly recommend this place!

Came upon this place by accident while walking about in Victoria. Really enjoyed the excellent selection of beers. Highly recommend the Glitter Bomb. Nice selection of bar snacks as well. Excellent service.

I'm writting this for my fellow beer drinkers. Do not ever purchase this brewery's non alcohol pilsner Phillips IOTA Pilsner. It's just terrible! It calls itself a pilsner but there is absolutely no flavours we come to associate with a pilsner. It's just a can of yellow carbonated water. I so wanted to like this beer but sadly, I just couldn't finish it and will be dumping the remaining 3 cans of the four pack. This is an acclaimed brewery with 20 years in the business so I don't know how the brewmaster could allow this to be called a beer. They should change their beer tasters, really. If I could give a 0 rating I would. So disappointed.

I've had freezer pizzas that were better.

Beer cheese came out cold and the pizza was barely cooked and generally a pretty sub psr quality. Reminded me of the crappy little pizzas I made as a kid in my toaster oven

This place is probably the coolest brewery that I've ever been to! It looks like it's a converted car dealership that now serves 15+ types of beer! Plan walking in you see the gigantic bar area with some really cool tabs that I'll come out of a very large pipe. It'a like a plumber met an industrial designer and they opened a bar! The coolest thing about this place is after you order your fears, they arrange them according to color, lightest to darkest. They didn't give you a small print out that discusses each of the beers in detail and gives you everything you need to know about them! It basically Does the explaining for the bartenders, and allows them to concentrate on keeping your beer full. The flights here are absolutely awesome! It was something like eight dollars for a flight of four and between two of us, allowed us to check out anything we were interested in. They specialize, like most places anymore, in hoppy beers that range from very subtle, all the way to very intense. It's actually hard to make recommendations because all of them or really solid. The electric unicorn was the most memorable, mostly because of its name! They have a store just off to the right after entering where you can grab growlers, single cans, six packs, shirts, hoodies or bike jerseys. All in all, this place was really cool. Some of the best beer I've had anywhere, a really nice vibe, very cool set up, and the opportunity to get some to go. If you're in Victoria, you absolutely need to stop here!

Good beers! Good service! Nice outdoor area for us to have a beer with our dog. And the pretzel was awesome!

Arrrrr this be great beeerrrr (pirate voice!) Phillips is an excellent brewery! I am a believer of listing the strengths of others so that those who witness them can become more aware, so here are a few strengths of Phillips; 1. Their Beer; first and foremost, they make, sell, offer tastings of, and serve great beer! I once heard the story of the owner starting the beer and all the struggles they add in the early stages - well Matt, it was 100% worth it because you've got a whole community o people who feel the same as I do! A personal favourite of mine is Hop Circle! 2. Their selection; Phillips does an excellent job of getting new beers out there for people to enjoy. They are constantly introducing new products to keep their impact fresh and exciting, and, the names and artworks that accompany these products are usually out-of-the-box creative! 3. Their community; from what they've done during the COVID-19 pandemic (making sanitizer for frontline workers) to hosting Phillips backyard party, Phillips is all about creating a positive community! They get 6-out-of-5 stars for this part! Overall, a fine fine beer! Enough said!

In any case I really enjoyed the Blue Buck, the 78 Kolsch, and the Wheatking, but my favorite was the Longboat chocolate porter.

Talk about hitting out of the park with the first stop! Whistle Buoy is located in a Market Square that's a beautiful open air area surrounded by shops, boutiques, restaurants, assorted businesses, and vast tracts of land with chairs and tables. Since it's surrounded by buildings on all four sides the wind would be challenged to ruffle your hair once inside. For this stop of the Ale Trail excursion we were each allowed one glass (not a taster...a full 12oz glass) of one brew. They have roughly a dozen taps that run the typical gamut of beer styles. I immediately gravitated toward the Shaft Coffee Stout. Not my usual go-to, (I'm usually more of an IPA / Pale Ale kinda guy) but something about "Dark. Coffee. Chocolate" grabbed my attention (Here's the part where Jim has an advantage. Jim's wife doesn't drink beer, so Jim gets her selection, too, so she (ok, I) chose the Froth Hazy Pale for hers (ok, for me).) I didn't expect the highlight of the excursion to be the very first beer I had, but the Shaft Coffee Stout was quite possibly the best beer I've ever had. It was smooth and rich and had such an amazing flavor. Honestly, it was more like dessert. I'm not saying my wife's beer (ok, my 2nd) wasn't awesome, it's just that the Shaft set the bar REALLY high. ( I'm just talkin' 'bout Shaft! ) Our group sat in the outdoor, covered beer garden, the weather was slightly overcast, and we were surrounded by like-minded beer lovers (except my wife, who donates to my cause.) As we sat the Market Square was busy with life as people walked their dogs, visited businesses, and a group of elementary school kids was escorted through the square. Sometimes it's nice to sit back and watch the world go by. The restrooms (gender neutral, thank you) are small...ok, tiny. There's barely enough room to change your mind. I do have to call attention to two things, though. First, it has the tiniest sink I've ever seen. Surely this thing had to be custom made. Second, they have a Code of Conduct posted on the wall, which I genuinely appreciated. Nothing outrageous, just a focus on respect and common decency. If I were able to get Shaft Coffee Stout at home I'd never leave home (actually I would just to get more Shaft Coffee Stout). It was only a brief visit to Whistle Buoy Brewing, but if I ever found myself living in Victoria, BC, there is no doubt this is where I'd hang out.

Even their NA drinks were good too. Will be a while since I'll return so have an extra drink for me in the meantime! Cheers!

Characteristics in this flavor profile are hoppy with some sweetness and a clean finish. After reading about their products before the trip, daughter and I were anxious to try them. And though we never got to the actual brewery location, we had no problem finding their brews for sale in liquor stores, and to enjoy in pubs throughout the city. Our very first tastes were via pub 'flights' of draught products, and they sure scored high on our taste tests. 'Dark Matter', a wonderfully, dark and delicious ale, became one of our trip favourite brews. I found out recently that the government liquor stores here (Vancouver & vicinity) were carrying some of their products. So when out to catch some Christmas cheer, daughter and I looked for it, and were very happy to find, and be able to catch six-packs of both 'Dark Matter', and 'Shine On' (an India Pale Ale). I was fortunate, and able to purchase the last on the shelves -- and when home, split them, so we could have tastes of each for Christmas. Dark Matter sure lived up to our memories, and Shine On was such a delightful, new taste treat. So glad these wonderful brews can now be found here -- it will definitely ensure not having such long times between tastes of Hoyne's brews from now on!!
