Four meats and two side, here is the ranking Meats - Best was brisket, (can eat as is) rib (tender but have to dip in sauce), sausages (ok, let it cook a bit longer), pulled pork (get in the seasoning cabinet) Sides - Best of show was bake beans (never had it with celery but was good, thicken this also), collards (good), worst of show, unfortunately mac and cheese. Overall nice peeps, I recommend atleast put one foldable table and chairs so everyone does not have to eat in car and yall forgot napkins and utensils. read more

Decided to try a new BBQ spot to near while I was in that part of town and will give it a thumbs up. I had the rib tips and fried catfish and while I wish the catfish came as two filets instead of just the one, it was ok ... just a bit more coating than I like but it was flavorful and fresh. The rib tips were very meaty and being a Chicagoan where tips are a thing and a must, it's nice to find them here because more BBQ spots don't have them. My son's and I were looking for a place to get some good barbecue after visiting the barbershop and we came across Pibb's Rib Shack. I knew the food was going to be good after smelling the meat cooking over the wood on our way to the order window. Wow! Go early in the day if you want something specific! They sell out fast because their food is delicious! We ordered the family brisket meal. Comes with two sides. We added green beans and coleslaw. The brisket was delicious! Moist and tender. They have barbecue sauces right by the register. We grabbed one of each, spicy, regular, and sweet. We also ordered a second family meal of sausage with fries and baked beans. We arrived on a Saturday near closing time, and these were the options left. I am happy we had an opportunity to try their other options because it was all good. More incentive to come back for more! Would recommend! read more

Had the pleasure of trying Pibb's for the first time this weekend. Called to place an order about an hour ahead. They were out of the Collard Greens, but I will be back to give those a try. I got the 2 meat dinner, which comes with two sides. I chose the Mac and cheese and green beans. Both were solid choices and accompanied the meats well. If you are only going to try one thing from Pibb's, you absolutely MUST get the Brisket. I've never in my life had brisket (or anything for that matter) melt in my mouth like the brisket did. AMAZING! I also tried both their regular and mustard barbecue sauces. The Mustard BBQ sauce was delicious. I look forward to trying the spicy bbq on the next visit. read more

I'm not the biggest fan of bbq food, but Pibb's Rib Shack was impressive. Placed my order over the phone, and the food was ready for pickup 15-20 minutes later. I ordered a rib meal, with beans and potato salad as my sides. I really enjoyed the baked beans and the potato salad was good, although I enjoy a little more texture (crunch) in my potato salad. The ribs portion was huge, although a little fatty for my taste, the meat itself was tender and flavorful, and I could tell a lot of love and patience went into its preparation. Pibb's had a decent amount of options to choose from, including sandwiches and dinner meals. They offered chicken, beef, ribs, pulled pork, meatloaf, sausage, brisket. Pretty much anything you could want. I went with a two meat meal. I always like be able to try a variety and at only $13 for the two meat meal with 2 sides, it was a great deal. I ordered the pulled pork and the brisket. For my sides, mac and cheese and collard greens. The meal was hefty and large portioned. The two meats were topped with my choice of sauce, sweet bbq. The pulled pork was top quality, not fatty, juicy and packed with flavor. With the sauce on it, it was awesome. The brisket was also fantastic. The long, thin strips of meat had that slight char on the edges, juicy and flavorful. The mac and cheese was creamy, baked and super good. The collard greens had great flavor as well. I've passed by this place a couple of times and I finally got the chance to stop by and I just want to say the customer service was amazing. Very friendly people and I just know everything is made fresh and the meat is marinated, it really has a really nice flavor and is cooked perfect. The side dishes could have been better but my partner is in love with the potato salad she's been talking about it for a week. I just didn't like the Mac and cheese or the baked beans. Their BBQ meat was delicious! I had the rib, the chicken and the sausage. They're freshly smoked and go well with their BBQ sauce, I liked the Sweet one. They only open on Saturday and Sunday. It located next to Tire Plus so whenever we sent our car to Tire plus for tire problem I would buy barbecue from this food truck. It was just so convenient. The service was friendly. Really nice guys who are into what they do, but their BBQ is not for me! My collard greens were salty with bones in them! Mac and cheese had no flavor. Pulled pork was really wet, with not much flavor. Ribs had a strong smoke flavor. While not tough, the meat didn't fall off the bone! Oh...my...goodness...this is THE MOST DELICIOUS BBQ! Juicy, smoky, and flavorful and all without a speck of sauce. We're trying to forgo the sauce and without the sauce the bbq was still unbelievable! They were out of brisket and collards because we went around 2:30pm. Best BBQ in town! Get here early because this place is popular and they do sell out. Juicy Brisket and Chicken. Sauces are delicious but aren't necessary because the meat is cooked right. If you don't eat pork they clean the boards in between and there's no pork in the collards. Skip the large chains and support a local small business with great food and customer service. P.S.
