The dough is fermented for 72 hours. It's affordable too. What's there not to like? Well, there's no pork here & this is as likely to change as the TTC subway coming up to Newmarket. Pepperoni pizza had beef pepperoni, with an inferior taste to pork, being chewy & slightly spongy. The tomato sauce & cheese were good though. Also made my own pizza with pesto, mozzarella, mild salami, fennel sausage, anchovies & beef Ham (the sausage are the small circles, salami the big circles & beef ham the darker ovals). The beef toppings were serviceable (still not as good as the pork versions), possibly because this pizza had more going on than the pepperoni one, but did not stand out. Pesto sauce was decent, though the flavour was milder than I was expecting, making it closer to an olive oil base. The whole combination with anchovies was too salty, but that's on me.
