    Soyganisa Taco! (Vegan) with Papaya atsara

    I was wandering around for something I could eat at Hole in the Wall. There are so much options, but if you're vegan/vegetarian, your options are down to one or two dishes from around 3 to 4 stalls. Which can be a good thing too, as it simplifies decision-making (among the perks of meat-free eating that I love. Deciding what to eat sometimes just boils down to what's there that has no animal products). Anyway, at that time Posporo has just opened up, and they serve what seemed to me is a fusion of Filipino-Mexican fast-food type of meals like tacos, burritos and tostadas. If you read through the menu, it's interesting to see how local Filipino ingredients such as atsara, kalamansi, muscovado and sibuyas Tagalog have made their way into Mexican-inspired dishes, and will make you curious to try them. Posporo's super bubbly staff invited me to check out their menu, and I was excited to see 'SOYGANISA' among their selections of meat! It's their version of a longganisang sabog using textured veggie protein (TVP). The soyganisa, paired with papaya atsara is beautiful. Though, do ask them to drain the oil well, as my first taco was drenched in oil that entirely soaked the taco. They were nice enough to replace my taco with a less oily version. The tacos are a good option for a lighter meal, but I'm really eyeing that beautiful Soyganisa Tostada next time, which is a "meaty salad" with all the works!

    I am immensely happy because Hole in the Wall has maintained its status as the country's first upscale food hall. I just love the different business ideas and concepts mashed together into this solar system of illustrious food purveyors,and I must say it is both difficult and unfair to pick my favorite because everything is really good. Each stall is unique in its own and while some are more realized and well-executed than others, the collective energy in this food hall is just inspiring. And very whetting to the appetite. Perhaps one of the best concepts is Posporo, which is a localized taco stand that takes pride in such awesome regional recipes such as inasal, sisig and longanisa. They have a nice soyganisa soft taco that is brimming with flavor. The hot sauce looks a bit weird, as it is brown like Mang Tomas sauce but it packs a really tasty and savory punch. I love how flavorful the soy protein is, and my friends who have tried it can't even belief that it's not meat. The soyganisa is served with atchara and some side vegetables, and each bite is exploding with a yummy and spicy mix of soy sausage, fixings and the hot sauce. At P90 per taco, this is one of the most affordable snacks in Hole in the Wall, with other snack stops being a bit pricey. I will definitely be back for more if this awesome soy taco. Kudos to Posporo for giving me yet another vegetarian favorite to go back to Makati for!

    Posporo has got me hooked on soft tacos. Posporo has been getting some attention lately because of their Mexican food with a Filipino twist. We went to Posporo, had a look at their menu, and saw that they had some soft tacos so we decided to go with that. We got a 3 piece taco plate with two of them being beef cabeza and one of them being fish. This is the first time I've tried Posporo and I really liked the beef cabeza tacos. The first bite was nice, soft, and juicy with all the flavors coming in like they should. The soft taco has generous servings of beef in it with some onions, cilantro, burrong manga, and a calamansi for you to squeeze over before you eat. The fish taco wasn't anything great and I wouldn't get it again despite it coming with generous portions of fish. The burrong manga that they put also goes really well with their soft tacos so it's good that they put that. Whenever I'd go to Hole in the Wall, I'll admit that I've passed by Posporo a number of times not giving it even a bit of the attention it deserves. I'd sometimes quickly look at the menu and not at all get excited. However, after having those nice and juicy beef cabeza soft tacos, I'll be coming back for more; and I won't be sharing. Maybe I'll try the sisig soft taco and some other stuff while I'm at it. Tip: Get the beef cabeza soft tacos.

    I am a fan of Mexican food and i have to say that Posporo definitely did a good ob with the Mexican Filipino fusion! When you order, you have to choose what kind of plate you want. They have tacos, burrito, rice plate, or tostada. You then order your meat which are Sarsi Adobo Carnitas, Tocino, Sisig, Soyganisa, Chicken Inasal, Beef Cabez, or Baa Fish. I tried their Sarsi Adobo Carnitas Rice Plate and it was really good! It came with a side salad and other condiments. All of which really built the whole dish and I really enjoyed it. They also offer other appetizers like their nachos. They call it the Nachos Cargado. It was a big plate of nacho chips topped with all sorts of goodness like cheese, meat, tomato salsa, Jalapenos, sour cream, and etc. They're menu was very upfront and didn't beat around the bush. It was basically Mexican food wit Filipino flavors! It was just genius!

The fish was cooked perfectly, that is, it wasn't overcooked like most fried fish dishes would be. All of us asked for fresh buko (coconut) juice servied in a whole coconut. However, the coconut was no longer young coconut that usually has soft meat that we can spoon up. instead, it was more "niyog" or mature coconut that needed to be cut up which the staff did for us.

The rice has an interesting flavor profile since it's mixed with spices and shrimp...it's definitely an interesting rice dish you won't find anywhere else. Abe has a huge menu that showcases the diversity in Philippine cuisine. The fact that it includes appetizers, salads, soups, mains, sides and desserts means you'll leave a very satisfied customer. Can't wait for my next visit!

Also the eggplant was fried and added with the sauce. When you order kare kare it automatically comes with sautéed shrimp paste. This dish alone will probably feed 4 people. Overall the service was great, we did not wait long for the food, and we were seated right away since we arrived there around 11:45ish. The restaurant was clean and quite cozy. Another smart idea to have the choice of small, medium and large orders depending on the number of people. We've always dined family style so we were able to taste different foods. Back then, if you've been living in Manila for most of your life, the words "food" and "court" in the same sentence never really sounded appetizing. Enter Hole in the Wall. I've been here a few times already, but stepping inside its huge hip maze of interiors never ceases to excite me. I'm not sure if it's the thrill of choosing what meal to try next or just the nice aesthetic of literally everything, that excites me more. On my first visit, I made sure to first try the super popular fried chicken from Bad Bird. As a big fan Southern-style fried chicken, I wasn't disappointed. The crispy skin had a yummy seasoning that's new to the palette, very different compared to my other favorites, such as the Chickenjoy from Jollibee and the Pan Fried Chicken from Pancake House. And there's something about their side dishes that just completes the whole meal. The corn on the cob with bonito flakes, sweet and umami flavors melting in your mouth, was to die for. The coleslaw provided a nice acidic break from the saltiness of the chicken. The meal was a fun experience itself. Just the other day, I tried the Pastrami on Rye from Mr. Delicious and it was monstrous--just plain impressive in terms of size. I didn't even attempt to bite on the entire stack, using my fork and knife like a pretentious chick on a first date instead. Each bite off the monster-wich was packed with so many different flavors, though the pastrami still easily emerges as the hero of the dish. And let's not get started on the sweet potato chips. I'm not a big sweet potato-lover, but damn, the portion was more than satisfying. If there's anything I'd like modified, I just wish there was a bit more of the veggie pickles to cut through all the meat and fat. For now, I'll end this review right here. If it isn't yet so obvious, I'll probably be back here in no time to try a different food stall or two.
