Proof Distillers gets it right. Distillery meets speak easy vibe, lets you feel cool without the pretention of sitting there thinking "am I cool enough to be here"? You are. And like that 90s show CHEERS that will inevitably be remade ... The staff makes you feel like "everybody knows your name". Open yet warm, the atmosphere is care free, but the cocktails made wit their oun spirits are serious...ly delicious. I am a fan of an old fashioned. They're old-fashioned has an interesting twist and is made with an aged gin. It was good and strong and picture perfect. We also tried the lemon drop. There is nothing quite as refreshing and tasty as a freshly made lemon drop. No artificial anything here. What a wonderful example of the specialized Martini trend made famous through the 90s and early 2000s. We also sampled a Swedish and Danish delicacy known as aquavit. If you are a fan of licorice or ouzo, give this delightfully pungent and aromatic beverage a try. We sampled it straight up, they may have it as a mix in for a drink but I'm not sure. Overall this place is a great experience and really knows their stuff. It was a joy to visit here and I think about it frequently when I remember my trip to Fargo. read more

Holy cow! So glad I finally made it to Proof. I was only there long enough to have one drink but it packs a punch. A friend recommended an Old Fashioned. Don't let the $10 price scare you off. It is so smooth and tasty. And powerful. This is good gin! For food, we shared the pork tacos (4 in the plate) and the onion petals. Oh, the onion petals. These are a must. I'm fairly certain they will haunt my dreams, in a good way. I can't wait to go back and try more. Don't sleep on the food here! I stopped in for a drink, which are super tasty, and happily found out they are serving food again. The menu is small but interesting and well thought out. I had genuine trouble deciding. I ended up with the Burnt Beef (brisket) ends with crispy onion straws. It was unbelievable... like I could eat this twice a week for the rest of my life and die happy. So much flavor and, importantly, the beef and onion straws were crispy and not at all soggy. Others by me in the bar had the nightly special (and beef and shrimp stir fry) that also looked amazing... I want to come back here with a group and order the whole menu ASAP! Cocktails were all excellent as well and service with knowledgeable and friendly. Can you get any better than this on Fargo? I don't think so, don't miss it! read more

WOW! This place is great and one of our new favorites in Fargo! We met a couple friend of our there for dinner and drinks on a Friday night. Neither of us had been there before, but had heard good things. Our hearing was right! The atmosphere was very cool . . . a beautiful bar on one end, tasting corner on the other, and sets of tables in the middle. They also have a raised corner on one end that's perfect for parties or larger gatherings of people. All of this looks over their distillery area with a huge wall of glass which you're able to look through and see their equipment. Now, onto the drinks. They serve their own distilled gin or vodka (they've got a whisky and a bourdon that should be ready by the end of March). The drinks were great. We each had the nightly special --- a gin-based fruity drink that tasted all too much like juice! After that we each had a different vodka or gin drink (gimlets, lemon/honey/vodka, and the like). We liked them all. Much to our surprise, the food was amazing! It was much more high-quality and upper end than what we were expecting. We started with the cheese plate appetizer. The cheeses were great and served with crackers, some meat, and an apricot spread. For the main dish, the guys had the beef medallions and the ladies had the pork tenderloins. The meat was top notch and cooked perfectly. Tender in the middle with crispy edges on the outside. Potato pancakes, polenta, and roasted brussle sprouts on the side. The other main dishes that we saw being served look delicious too. We will definitely be back again to try other things on the menu! If you're looking for a cool, hip, and casual place for dinner and drinks -- either on your own or with a group -- Proof is the place to go! Not to be missed!! read more

My husband and I stopped by this distillery while awaiting a concert. Daniel was our bartender for the evening. He was friendly and very knowledgeable about all parts of the business. The drinks he crafted were all delicious, using only the freshest of ingredients, most of which are locally sourced. I am a huge Moscow Mule fan and theirs was amazing! From there, I had Daniel pick the rest of my beverages based on the fact I love Mules and he was spot on in his choices. Proof also has a small menu of food items for purchase to enjoy with your cocktails. We tried the Antipasto platter which had an array of artisan meats and cheeses along with nuts, crackers, and dried apricots. Delicious! Daniel raves about Chef Judd and his creations, which rotate depending on what locally sourced ingredients he gets for the week. We will be returning to this place as often as we can in our visits to Fargo! The service, atmosphere, cocktails, and eats are outstanding! Proof is proof (heh) that Fargo is an up-and-coming super fun vacation spot and what I've since declared as "my cabin destination". I don't want to drive 3.5 hours to sit in a pontoon on a lake. I want to drive 3.5 hours for a weekend getaway to a fun little city where I can easily go to fun places like Proof and have some kick ass cocktails. They currently have vodka, gin and barrel-aged gin on the menu and for off-sale purchase. More boozes to come, though! We tasted their gin at a local bar and sang its praises so much that we were directed here immediately after closing our tab at the other place. I had a greyhound (vodka + grapefruit) my standard and it was delicious. I tasted the gin fizz which was tasty and will always be ordered by my husband as he has a penchant for drinks with foamy egg whites in them. Loved the gin so much that we opted to buy a bottle that we subsequently schlepped all over the city for the rest of the night. Well, we've been discussing our experience here for a week now and here's what we've come up with. Drinks: very good. The gimlet was smooth, the old fashioneds nicely done. Food: needs improvement. The Cheese & Charcuterie Plate for $13 was sad. They need to try mezzalunas and and redo this one. The pork belly tacos were good, not great, but good. Vinyl Taco has them on this one. Atmosphere: well, we expected a little more refinement here. I guess I wanted to see a step up from a brewery here since this is a "Distillery". It just seems like a Distillery should be more of a grown up place. We will go back for drinks but not for the food. Staff: great! So there's really two things to review: the Distillery which has their spirits available for off-sale, and the lounge(?) which serves cocktails and small-place hors d'oeuvres. Being a young distillery, their main offerings are their gin and vodka. Both are of excellent quality, the gin in particular is very interesting with a fresh, zesty profile that makes a excellent cucumber tonic. They also have a new line of cordials including a coffee and cream liqueur that makes a mean bulldog. The lounge is a great place to meet friends or take a date. The drinks range from $5 to $10 depending on whether they make use of their standard or reserve spirits. The reserve spirits include not-yet-ready for off-sale spirits such as their barrel aged gin which is definitely worth a try. The small-plate menu is of stellar quality - everything i've tried is mouth watering. However, as you the name suggest, don't come here hungry. The portions are far from dinner sized but if you're expectations are in line you won't be disappointed. read more

Buyer beware I guess. The appetizer specials board was prominently displayed and I was pleased to order the chips and salsa for $5 to share with friends. A good-sized portion of chunky but bland guacamole came with the chips and salsa. When the bill came I was charged $12 for the appetizer plate. The menu listed the regular price as $10. Hmmmm. So I asked the server about the discrepancy; he dismissed the specials board with "Oh, that's old" and adjusted the bill to the regular price. What really bothered me was one of the glasses was dirty, but the waitress acted like it was nothing. Odd. Also the women in our group commented about the filthy restroom. I had high hopes going to this place, due to a recommendation by a friend. I later found out my friend hadn't actually been to the place, Ha, Ha! I can't say enough about how much I love this place. The night I went here was the first night I ever went out drinking and didn't have a single beer all night... the mixed drinks were sooooo good. And the best thing, they took us on a tour of the distilling room, told us all about the process of making whiskey, gin, and vodka, the backstory behind the building and the still. My husband & I had dinner here for the first time on Saturday night. We were both quite impressed. The decor is warm & inviting. The bar is a beautiful piece of art. Our server Daniel did a great job making us familiar with the menu. Our drinks were brought to the table by the bartender who answered all our questions about the distilling process. The menu may not be huge but there were a lot of unique choices. My husband said his burger was one of the best he's ever had. The fries were an interesting shape and were served with a smoky ranch sauce. The egg rolls came with a dipping sauce that was spicy & sweet. I liked the texture of the naan which came with a buttery garlic & herb spread. The highlight for me were the taco fiesta potatoes - soooooooo flavorful! Chef Eli stopped by our table to say Hi and make sure we were enjoying our selections. My husband also had a drink called the bay breeze. It was so tropical he felt like he was in the Bahamas instead of in frozen Fargo that evening. It was a fun date night and we look forward to coming back and exploring more of the menu. read more

My friends and I stopped by to try out Proof on a trip to the bars downtown. We got fast service and got suggestions on what drinks to get. They were made relatively quickly. Everything went perfectly fine and I was thinking about coming again soon until we tried to pay. Its like we disappeared. We were all waiting with our money on the table but were continuously snubbed and ignored. When the bartender finally took our money for the tab about 30 minutes later my friend heard a curse word muttered. Disrespectful but I did enjoy the gin. Will not be visiting again. read more

Poor management; poor service. I should have listened to my family and not tried this place. My friends and I were coming here for an upscale, pricey (which is was) experience, but we were immediately confronted by hostile attitudes. It didn't seem like a big deal for my girlfriend to want to move two tables together so we could all sit together (the tables only seat four people). The waitress was immediately confrontational, so one of the other girlfriends (who used to be a waitress) asked to talk to a manager. The manager basically told us to leave if we didn't like their rules. By then the eight-person table opened up and we had our drinks, so we stayed a while and had appetizers. Neither were anything worth noting, except they were priced higher than they should have been for what we got. One of the appetizer orders was wrong, and it ended up being over 20 minutes to get the right one. Most places wouldn't have charged for it, or thrown in a free drink or dessert. Not this place. We barely got a "sorry" for it. There are many, many places in town with better food and drinks, and certainly better service. I won't be patronizing a place this badly managed/owned. read more
