Well, let me tell you -- I worried for absolutely NOTHING! When dinner was served, the food was fresh, HOT and delicious! And it wasn't just me saying it. Our guests repeatedly told us how amazing the food was. What made it even more special was that the menu gave exactly what I wanted for our wedding -- a multicultural experience that represented the joining of our families. My Nicaraguan mother-in-law especially loved the rice and beans, which gave her that familiar Nicaraguan-style gallo pinto flavor. That meant so much to me because I wanted both sides of our family to feel represented throughout our wedding. And those leftovers?! They did NOT go to waste!
