An unexpected flavor when I took a bite. Overall, this is a satisfying bowl of ramen, and priced pretty much the same as a bowl would cost in Japan. I've realised one thing though: while I like some adventure in ramen flavor and would enjoy add-on ingredients like yuzu oil, or pesto, or cheese, I find that I'm highly traditional and would still look for the classic tonkotsu broth, plus ajitama (the egg), plus chasyu, and if at all, ninniku (garlic).

The ramen came with a large piece of nori and a deep fried soft shell crab on top of the models. Michael and I ordered the same thing except that he ordered thin noodles. I ordered the thicker curly noodles. We both agreed that the broth was fantastic. It was milky, not too heavy and so full of umami especially with the crab flavor. We ate the crab as soon as we started as we didn't want it to get soggy. The egg was also perfect. The orange yolk inside was jammy. Definitely perfectly cooked. We also had an order of Karaage which was good (4 stars) and an order of Gyoza which was just okay. It came out piping hot. I have to say that I like the gyoza better at Daikokuya in Little Tokyo LA. I haven't found anything as good as Daikokuya's gyoza. We loved the food so much we decided to have lunch here again the following day. They no longer had the Crab King Ramen.
