Unbelievable service and food! My husband and I came in for breakfast today, and I cannot say enough good things about our experience. I was looking for something with beans and originally ordered the breakfast huarache, mistakenly assuming it was a burrito. I prefer flour tortillas over corn, which started a whole conversation about how the dish is prepared. First, our waiter went to the kitchen to check on modifications, then a second waiter kindly came over to explain the traditional preparation, and finally, the chef himself came out to help! He explained that a huarache is open-faced, not a burrito, but immediately offered a perfect solution: he could custom-make their breakfast burrito using pinto beans as the protein for me instead. When the chef brought it out, it was HUGE. He took the time to explain exactly how he made it and told me to just ask for him or request the modification next time. Not only was the service incredibly attentive, but the burrito was easily the best I've ever had. It's 9 hours later and I am still full from eating just half of it! We had a large group and everyone's choices looked delicious! Our waiter, Luis I think, was wonderful. Happy, nice, and attentive. Since I'd not been here before, I ordered my favorite dish, the enchiladas mole. It's pretty good here at Rancho Chico and the little edible corn bowls for the rice and beans are so cute. From out of town and specifically California so authentic Mexican food is a common and hard to beat compared to the west coast foodie scene. I came with an open mind and had a great time, great hospitality, attentive service by several workers and yummy food! The flavors were good but compared to Cali, could use more seasonings on the beans. The beans didn't have the traditional lard/cream in them and were a slightly different flavor. I assume flavors need to be a bit more bland here and well done given the clientele. So with that in mind, we all enjoyed our food, left very full, had fun fun drinks. The meat and shrimp were well done. I prefer a little softer but again I didn't mind knowing who they are cooking for. The chicken in the taquitos were soft and moist! It was so fun to have the make the guacamole table side. I would add garlic and pepper to the guacamole but it was delicious. The chips feel homemade and def got us full. Big menu, great service and good food. Lots of seating. Steak and shrimp fajitas are both great and this is coming from a picky meat eater. Steak meat isn't tough or fatty and shrimp is pretty big and they give you plenty. The asada bowl and shrimp bowl are both good. Ordered DoorDash from Rancho Chico today after never having been there. It was fantastic! The chimichanga was nice and crisp and packaged separately from the beans and rice which kept it from getting too soggy from the beans. The beans and rice were delicious, too. Our tostada side was also very good, but did get soggy due to the toppings. Even so, the flavors were still great and it was a huge portion size for being a side order. I am traveling for work, and my hotel is across the street from Rancho Chico. I couldn't find a review on Yelp yet - they apparently just opened - so I trusted the girls at the front desk and gave them a try. I was not disappointed. The place is clean and bright, and the food was fantastic. I ordered the street taco meal that comes with rice and refried beans, and everything was great. I also had a margarita that was very good. So yesterday was taco Tuesday, yeah : ok pull up to Rancho Chico I was skeptical at first because I'm from the city of Chicago and our Mexican.Restaurants are authentic even the hole in the wall Mexican joints are so much better than Rancho more food good energy, like they welcome there guest/ customers had a little funny vibe when I went inside Rancho. I approached the counter I made it easy for the guy. I just said just give me the special for today and it was Tuesday Tacos ; understood. so I asked for no tomatoes two chicken tacos, one ground beef taco long story short I get to my hotel, which is not too far from the place and I opened up my food and I have more tomatoes than I have meat I had like two medium strips of chicken which they could've cut up a little better and made it in and made a little fuller and I had just a half a scoop of ground beef just so disrespectful so disrespectful soooo disrespectful. I walked in very animated looking character, but I'm very polite items were $10.28. I was so upset and so mad I went back up there to talk to the guy. He walks off so now I'm talking with the owner and let them know just how disappointed I was with my food. The owner opened up my food and I showed him everything he did agree tacos were not fulfilling not appealing looking so I told him just keep that $10.28 and I will not be coming back. They offered to give me some more food, but I don't trust Rancho Chico. I didn't know what they're gonna do to my food next , sad the reason why he did my food like because I didn't tip (but they already took a tip out) usually tip but I didn't tip that day because I just didn't feel like tipping because the energy in there which is not right and I won't be coming back. Absolutely the best in Springfield!! The service was steller! The chips were warm with the delicious salsa that had a nice warm cumin kick to it. I had the carne asada that was so good! The best thing about my dinner was the margarita. However, because it was served in a square glass, it was almost impossible to drink! I finally had to resort to drink it with a straw, which meant I didn't get the benefit of the salt around the rim. I tried one mole enchilada and one chipotle enchilada. The mole was tolerable, but the chipotle was neither smoky nor spicy. in fact, the cheese sauce on the chipotle enchilada looked as though it were made with Velveeta cheese.
