Bought my chile from Rosales Produce 9/2/2025. Because of the positive reviews on yelp and being close to my house I decided to give them a try. I can't tell you how many times I have bought hot chile from other places and the chile ended being mild. Rosales' hot is hot and flavorful. The owners of the farm work at this location and were very helpful answering questions. I like to buy my chili when it starts turning from green to red. The owner said that the chili starts to turn red at the end of September but if you wet the sack and keep it cool overnight that it would start turning red the next day. I roast my own chile so I did this and it worked. The owners take pride in their farm and their chile and it shows. For those who are new to peeling roasted chili I attached a photo of my chile peeling table. The bowl of water is for rinsing the peelings and seeds that get on your fingers. Rude owners who wanted to blame us when we complained that the chile was mild when we ordered med-hot. They wanted to argue with us. Poor customer service - unkind to a veteran who spent $100 on Med hot chile (that taste like bell peppers) for my mom. They did finally give in and offer us a sack of hot which is incredibly hot. We bought our chili there in the fall of 2025. The chili was so easy to peel and the taste was everything I wanted! Hot but not too hot. The year before we bought the same type of chili (hot) and it was inedible. Nobody in my family and extended family could eat it. Rosales also has chili that's already peeled and bagged in separate smaller bags. It's pricey but worth it for those who hate peeking or for those who just can't. Great quality chile and great knowledgeable staff. I pride myself with being able to eat a good amount of spice, I was debating between the 1X and 3X hot. I got to sample both pre-roasted and really couldn't tell the difference because my mouth was burning. I'm glad I went with the 1X hot, I would put the spice level between a jalapeño and thai chili. Heather M did a fantastic job covering all of the bases about this place: the hide-away locale, friendly employees, $1 credit transaction fee, and oh-snap heat these peppers deliver. I consider myself a pretty ruthless spice aficionado, but I settled on the Hot variety, here. $15 for a half sack, $25 for a biggie. I love how this industry - which is truly the tierra of our lovely state - still resembles something of a legalized drug cartel/black market. We buy this stuff on the down-low and separate it into lil' baggies when we bring it home. As a populace, we ingest chile on a daily basis, we crave it, the stuff satisfies our insatiable addiction for comfort food and when we're away from New Mexico our cravings are so overpowering that we totally turn up our noses to the bevy of southwestern-inspired eateries. For example, I once dined at a restaurant in Portland that offered what it called a "chili relleno", a fried green pepper with monterey jack cheese. I totally got my snob on. When I brought it into my abode, the pods were covered in mold. So first lesson, don't do that, transplant gringo. Get 'em out the bag pronto and freeze 'em. I bought another sack, brought it home, opened a beer and spread the harvest on my dining room table. I'd made the (unwise) decision that I would remove the skins and seeds prior to a deep freeze, and that's when I made the (unwiser) decision to go at this effort without putting on a pair of latex gloves. For the better part of the following month, my hands literally emanated heat. It was as if had implanted a couple of those shakeable heat packs (skiing/snowboarding Godsends) directly into my palms. Red or green? It's a staple question in NM but come August/September it's all about the green. I've been getting my green chile fix here for 3 years now and it's never a disappointment. It's $1 extra if you pay by card which IMO is reasonable. The green Chile has an amazing flavor and packs a bite. The last 2 years I got hot and this year I did 1 bag of hot and 1 of extra. Woah the heat is intense but the flavor is amazing!!!! Always friendly and you can't beat the amazing product. We have been buying our chili here for three years. It is by far our favorite place to buy chili. They do a great job roasting. We just peeled and sacked six forty lb sacks with friends and probably didn't lose but one chili(if even that) per sack due to how well they roast it. Best green chiles in ABQ and reliably the best I know of - I've gotten my chiles here most every year for the past 10yrs. This year I got the Barker X-hot variety and they are awesome! Pleasantly sweet with perfect heat for me (pretty darn hot for most folks). One thing I especially appreciate here is that their roasters are true pros - I've never had trouble peeling when I buy from Rosales. Let them sit in the bag for about 1hr before peeling. I love these guys! I ate my first green chile when I was 4, 35 years ago. My dad would roast it himself on a charcoal grill, with a couple boxes of baggies, a stack of tortillas, and a shaker of garlic salt. I asked him for some and he warned me it was hot, but I ate it anyway and burst into tears. My mom yelled at him, but 10 minutes later when I asked for some more, she gave up and let us do our thing. I've tried to recapture the joy of roasting and peeling chile with my family every autumn ever since, and I've been let down by the Hatch chile I've bought at Smith's and Fruit Basket several times over the past decade. It was often thin, bland, and had very little heat, so when I first tried Lemitar green chile, it was a revelation! Lemitar green chile has been consistently delicious and hot whenever I've had the good fortune to score some, and Rosales Produce is the best place I've found in Albuquerque to buy it.
