    Summer Roll with yummy peanut sauce

    Had a chance to stop in for lunch today. The Pho was amazing. The broth reminded me of the early days of Pho in the US. Back when the broth was the star. The Summer rolls were very lovely and the peanut sauce was the real deal! And the gyoza was super crispy and a delight. I might have to make the drive again soon. Just for the Pho alone.

    slooooooooooooow service, waited about 45 minutes for pho, and there was barely anyone there. decent food though. ‍

    Good food but the lighting is green and gives everything a ill look to it. The,waitresses never seem even a little happy. But good food.

The second bite included nicely herbed noodles with fresh, good quality lettuce, mint and cilantro. The third bite, and majority of the dish unfortunately, contained overcooked, chewy chicken. The fish sauce mixture lacked birds eye chili, acid and seasoning. Dry chicken dominated, but ironically components that require more delicate treatment were prepared well. The fried spring rolls (cha gio) were greasy, missing that blistered, bubbly skin.. My companion ordered a strawberry matcha and the vegetarian bún: nice and herby and green, but lacking that good flavor (chili, acid) in the Nước Chấm fish sauce. It shouldn't be solely up to sriracha to get a dish to the right flavors. In all, a nice spot aesthetically and friendly staff but while dishes had super fresh veg and some solid proteins, other proteins were overcooked and our dishes were missed some of the flavors we love to see in Vietnamese food.

It's a great space so definitely hip... but not without a cost... trendy location means higher burden for the business and higher prices. I didn't think I'd see a pho special priced at $24 yet in Oregon but here we are. Granted bone marrow is not cheap and it's a very unique rendition. The other problem is the volume of noodles... literally the cheapest part of the dish... there was very little for a $24 bowl. We asked for extra noodles and they obliged for $2. Also that bone marrow was DIVINE if you're into that... but yet again... it's "butter" so what do I eat it with? The tiny amount of noodles or the fried donut that has a lot of oil content as well... my answer is... MORE NOODLES! While it was generously stuffed with bean sprouts/veggies, pork and a couple pieces of shrimp, the downside was it made the batter a bit soggy and the crispness vanished--pretty at presentation, it did not hold up well and fell apart while eating. The Vietnamese coffee was strong but it had a strange aftertaste--kind of soapy. The pho was alright--nothing stand out about it. There was plenty of meatballs, sliced beef and lots of broth. With the exception of getting seen & getting seated, service was good. Our server was attentive, checking on us regularly. Overall, I may check it out again and try other menu items on my next trip to Eugene.

The outside is crisp and flaky while the inside is soft and chewy. I asked for chicken as the meat choice. I enjoy how the carrots and cucumbers are sliced in a square straw. I think that provides a nice texture in every bite. The wonton noodle soup was delicious. I've never had soft wontons before. They've always been crispy nibbles on a side plate. I like that in this dish they were part of the soup. I was a little disappointed in the vermicelli noodles though. They were nicely done and very tasty, but there were so many that they clumped together and were difficult to get a bite of without getting a whole mouthful. Also of note were the drinks. I chose the pineapple tea and it was MARVELOUS! All in all, lunch was an amazing experience and I will always remember that meal with my stepmom.
