I understood why most of French didn't rate this restaurant satisfactory or above, the food served here are very 'simple'. I appreciate it from a different aspect of it rooted from Japanese culture and Zen.
Soba served here obviously is the highlight, furthermore, a very light soba with natural soup almost taste nothing. Or Mocha soba what looks stunning but still, served cold and tastes plainly.
Buckwheat flour requires greater efforts to make, and hard to absorb flavours. It feels like a unique creature one of its kind, not easily negotiating with any sauce nor ingredients forced to it. It only goes with a nice pot of soup or dipping. You respect it as it is and it returns you with a homely treat, nutrition, and memory. Yet not all philosophical meaning has to be entitled to food but it is an important cultural element to Japan and Asia.
With unfriendly menu that wasn't able to understand it from its language (Japanese and French), luckily I picked right seasonal food - Mocha Soba. The noodles it selves are solid and elastic, very up to our standard of defining a good noodle. My friend ordered Chicken soba in hot soup, it was lovely and delicious! SOUP is always core of the soul in Soba, and it certainly didn't disappoint us. Japanese omelette egg roll was light and full of the natural frequency of egg. Everything was just natural and light, as if the summer's breeze, come and goes, but left something on your lip tips.
Ask yourself, in this big city, how many time would you able to calm down your mind being able to appreciate the natural flavour of the food itself rather than the highly-skilfully-made sauces?
