Years later after cooking with her many times at home cooking with her for our family I found a large knife in a cabinet that she had not used for many years because she was using the good one that was very sharpened; this knife was very dull, and to this day I have a four inch scar on my middle finger. Hence more people get cut on dull knives than sharp knives. I am now a self trained chef from my mother and others in my life; never ran or owned a restaurant, but love to cook northern Italian food for me & my wife and several friends, and extended family in another state. Anyway I have hired Stan (Stan's Slicer Service twice, and last week he brought back 18 knives sharpened in two days he personally picked up, and had delivered back that were perfectly done. One knife was my moms she gave me which was approximately 16" long & five inches wide and had a small nick in it; nick was gone & so sharp I could have shaved with it! His pricing is fair, does an outstanding job, and quick response. He also put food grade mineral oil on several knives on wood handles no xtra charge.

    After 2 previous excellent experiences in sharpening my survival gear and steak knives, I decided…read moreto entrust them with my very expensive SHUN Japanese steel (VG-MAX, Damascus clad, Tsuchimee (hammered) blades w/ Pakkawood D-shaped handles) Kitchen knives. I dropped them off at the shop in the morning and they were ready for pickup in a half hour. Cost to sharpen is $6 each, regardless of blade length (so just $24 total). I took them home, washed them up in soapy water and tried them out. The blades pass cleanly through food items with little effort and no loss of juice. Be sure to use a solid wood (Maple, Beech, Teak or Walnut) cutting board, not bamboo, ceramic or glass! This was my first time having these blades professionally sharpened. Typically, I did it myself at home on a whetstone. I bought these knives back in 2015, and I thought that a professional job was long overdue (being correctly sharpened to a 16-degree angle). He even reached out to another knife expert to see if we could figure out the maker, maybe Universal. I've used his services in the past, bought a nice gift certificate for my son's birthday (which he loved). But this, today, off the chart, way above 5 stars. And so incredibly reasonable, I had to leave a tip to pay him what I thought he should have charged me!
