We picked this restaurant based on the Yelp reviews. It's located in an old train station. The inside is very impressive with a high ceiling, exposed brick walls, a balcony and a moose head on the wall. There was a beautiful bar and lots of windows. It looked like there were three separate areas: the bar area, a lounge area with leather sofas, and the brew area where you could see the brewing through a glass enclosure. College age people preferred the brew room and everyone else used the other rooms. The age of people at this restaurant was quite young, twenties through early forties. We both tried their IPA and that was quite good. For the main course, we both had the fish & chips plate. This was not your usual plate of fish. They served three different types of fried fish. One was haddock, one was salmon, and I don't recall the third type. As we were eating the fish we noticed that the bottoms of two of them were burned. Our waiter agreed and said he would replace those. Four pieces of fish arrived and they were less burned but still over cooked. The taste, however, was quite good, especially with the home made tartar sauce with herbs. Our waiter apologized for the fish and only charged us for one plate. I don't hold this against the restaurant. We all have our bad days. In this case the waiter stepped in and made things right. That's the sign of a good business. read more

We stopped here on our way to Quebec City. I was excited to see that they had venison on the menu. I ordered the Deer Burger. I was so excited to see this on the menu. I had deer burgers every winter growing up. It was when our hunter friends had the meat and my mom, who was an excellent cook, would offer to cook some meals in exchange for deer. Unfortunately this burger was so bad that I only took two bites and did not finish it. It could have been used as a hockey puck. I think the meat bad, but it was hard to tell because it was cooked extremely well done. The bretzels (aka pretzel bites) were okay, but not great. There was no salt. Pretzels without salt? Caesar salad was good, but not great. Nachos were okay, but not great. In general there was nothing special about the food. I suspect that the beer is the main attraction. If beer is what you are looking for, this place is for you. If you are looking for food, then there are many other choices that are so much better. read more

Completely unassuming restaurant, located at train station, behind the main street. Easy parking in the garage for $1. Very cute inside. Great windows and seating. Great attention to detail. Great glassware collection displayed. Also connected to a cute cafe with croissants and coffee. We sat at bar for drinks and lunch, on our way to Quebec City. Bartender was very friendly and helped us with French vocabulary. Split the Beer sampler- all very good. For lunch I had the Pizza with black olives, red pepper, blue cheese and mozzarella. It was, of course, delicious. This place was not expensive,we enjoyed great service great food, and c'mon, it's a brewpub-- they make their own beer and offer a sampler!! I've been to Siboire twice now, on a sunny weekend on the patio and a Friday afternoon. Both times were very good, lovely service and tasty beer. The Microbrew culture in Sherbrooke is going strong and Siboire is one of the best! I had been there before for beer but last night was the first time I went there for food. It's located in the old Canadian National Railway station that still partially serves as the Intercity Bus station. Parking is no problem, there is free parking for Siboire customers between 4 PM and 4 AM while the parking garage next door is avaiable during the day. First, the most important, is the Beer. I had 3 pints, one of their Oatmeal Stout, which was excellent, nice and rich but not too heavy and flavourful. Not quite as good as St. Ambroise's Oatmeal Stout because it is a bit too watery, but still great. Then I had a pint of Calvaire, which is their signature Pale Ale. It is a great pale ale that has a good hoppy bite. Finally I had the Ingenieuse, which is an Irish Red ale that is fairly sweet for a Red but still very tasty. The Food was very good, I had fish and chips that was very good. You get to choose the kind of fish you want and get 3 pieces plus fries and coleslaw for $15.00. The fissh was nice and moist and the batter good, blus the fries and coleslaw were excellent (some of the best slaw I have had). Definitely worth the money. The Service was also excellent, the waitress was attentive and very friendly. This is one of my favourite places in Sherbrooke and I hate saying this but it is actually a better pub with better beer than my beloved Golden Lion in Lennoxville. I apologize to all my fellow Bishop's Grads for saying that but it is true. read more

I agree with the majority of the reviews on this page, the beer is excellent. The night I visited they had two sour beers to chose from that were both excellent. The downside! The food was ok at best, and for what you get, way overpriced! If this is a university student hang out, I don't know how they afford to buy the food, which is mostly heavy carb food or deep fried grease. I think places like this will have to adapt to stay in business. The trendy beer culture will not last forever. When you see dudes walking around with man buns, you know you're in a trendy place. You'd never see a working class joe elbowing up the bar for some wings and a pint in this joint. Uncomfortable chairs, arrogant wait staff, will be a thing of the past. I would have given this place a 3 but the beer is fantastic! The water proclaimed the fish and chips was the best in town. If your cool can not manage to successfully make crispy fish and chips, get ride of him! The fish and chips were ok, the fries were cut very thin, and boring! I've had better fish and chips from food trucks off the side of the highway in Nova Scotia. I had the wings, I paid 14 dollars for a dozen wings, and you don't get choice of sauce. The sauce was some type of brown sauce like a cross between a sweet and sour sauce and Philippino marinade. It was just ok! But not gastropub worthy. After we left this place, we walked up the hill and went to a different gastropub and I had one of the best burgers in my life! read more

5 stars for the beers, 3 stars for the food, average is a solid 4 stars. The beers are all very different, so chances are you won't like some, but you'll love others. They are very unique in taste. Food was good, just too much vinegar in the sauces. read more

This place is really nice and has a nice ambiance. I'm actually not a huge fan of beer but got dragged here by my friends. The inside is very cosy and it has a nice "fancy" vibe. I ordered the salmon fish and chips and the vanilla milkshake. The fish and chips were amazing! The salmon was well fried and the fries were delicious. The milkshake was also really tasty. As far as I'm concerned, the food was great. The waitress was also really nice! I would definitely go back for the food. read more

Excellent beer which rotates regularly. I have never had a beer that I didn't love at Siboire. The food menu is small but also excellent - I have had nachos, salad and frites. All delicious. They also have pizza and a few other things. Free wifi and plenty of space, with a small deck in summer. A real gem in Sherbrooke. read more
